Mango Cheesecake Box | Cheesecake without Agar agar or Gelatin

This is an easy to make cheesecake recipe and we don't have to use any setting agents like gelatin or agar agar. I made this recipe using only a blender, it's a quick and easy summer recipe! If you like cheesecakes, then try out this recipe, just make sure you use ripe mangoes for extra taste! I have used 4 inch box to set this cheesecake, this recipe will make 2 such boxes.



Ingredients
  • Digestive biscuits - 60 gms 
  • Melted butter - 30 gms 
  • Cream cheese - 150 gms 
  • Mango - 190 gms 
  • Condensed milk - 1/2 cup 
  • Cardamom powder - a pinch 
  • Mango - 1/2 
  • Sugar - 1 tbsp

Method
1. Blend the digestive biscuits in a blender till it's powdery.
2. Add the melted butter and blend again. Mix well.
3. Transfer equally into cheesecake boxes. Press well and refrigerate.
4. To make the cheesecake layer, add the cream cheese, chopped mangoes, condensed milk and cardamom powder into the blender and blend till it's smooth.
5. Divide equally into the box, spread evenly and leave in refrigerator for 2 hours.
6. For the top layer, add 1/2 a ripe mango into mixee jar. Add 1 tbsp sugar and blend till smooth.
7. Add this over the cheesecake layer and leave in fridge for another 1 hour.
8. Decorate with chopped mangoes and mint leaves.

Notes
1. You can add more or less condensed milk depending on the sweetness of the mangoes.
2. Instead of condensed milk, you can use sugar.
3. You can use homemade cream cheese too.
4. You can add 1/4 cup of cream too.

5. Transfer equally into cheesecake boxes. Press well and refrigerate.

7. Add the cream cheese into a blender / mixee.


8. Add the mangoes.


9. Add the condensed milk.


10. Add the cardamom powder.


11. Blend till it's smooth and creamy.



12. Transfer into the box and spread evenly.



13. Leave in fridge for 2 hours.


14. For the top layer, add 1/2 of a ripe mango into a mixee jar.


15. Add sugar.


16. Blend till smooth.


17. Add this on top of the cheesecake layer.


18. Cover and refrigerate for 1 hour.



19. Decorate with chopped mangoes.


20. And mint leaves.



21. Delicious mango cheesecake is done.
