Indian Scrambled Eggs Recipe

Scrambled eggs is one of the most simple dishes that can be made. This is a quick fix dish that is done in our home. It can be had as it is or with breads or even with roti. If there are no vegetables at home, then this comes always comes to my rescue!



I also make a masala scrambles eggg / egg bhurji which also tastes awesome.
We like our scrambled eggs with lots of onions and pepper, you can reduce the onions as per your preference.


Ingredients
  • Eggs - 2
  • Onions - 2 medium (chopped finely)
  • Pepper powder - 1 tsp
  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/4 tsp
  • Cumin seeds - 1/2 tsp
  • Curry leaves - few
  • Green chilli - 1
  • Salt - to taste


Method
1. In a non stick pan, heat oil. Once the oil heats up, add the mustard seeds, urad dal and cumin seeds and wait for it to splutter.



2. Add onions and saute til they become translucent. Add the curry leaves and green chillies.
3. Push the onions to one side and break open the eggs. Saute the eggs until they are scrambled. 



4. Add the pepper powder and salt and mix everything well together.




Notes
1. Ideally only one egg is added for 2 eggs but since we love the taste of onions, I added more. You can add just 1 medium sized onion.
