Vegetable Bread Upma

Vegetable Bread Upma is a delicious and healthy variation to the regular bread upma and I make this version atleast once a week. This dish makes a perfect snack or a breakfast dish. 






VEGETABLE BREAD UPMA
Preparation time 15 mins | Cooking time 10 mins | Serves 2

Ingredients
  • Bread - 8 slices
  • Carrots - 2 medium
  • Beans - 7 to 8
  • Potato - 1 medium
  • Onion - 2 medium, chopped or sliced
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Coriander leaves - few chopped
  • Green Chillies - 2 chopped
  • Salt - to taste
To Temper
  • Oil - 2 tbsp
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1 tsp
  • Urad dal - 1/4 tsp
  • Curry leaves - few

Method
1. Cut the edges of the bread slices and chop the bread into cubes and set aside.
2. Chop the veggies and pressure cook them with enough water for 2 whistles and set aside.



3. In a pan, add oil. Once the oil heats up, add the mustard seeds, cumin seeds, urad dal and curry leaves,
4. When the seeds splutter,add the chopped onion and chopped green chilli. Add salt and saute until the onion turns translucent.



5. Add the pressure cooked vegetables along with the water. If you don't water to pressure cook the veggies, add them raw at this stage,add enough water and allow to cook for 8-10 minutes or until the veggies are cooked completely.
6. Add the masalas- turmeric powder,coriander powder and garam masala powder. Mix well and allow to cook for a couple of minutes.



7. Add the bread pieces and mix along with the masala. Cook for 2 more minutes, add chopped coriander leaves and switch off.




Notes
1. Add any veggies of your choice.
2. You need not  pressure cook the vegetables, you can cook directly in the pan.I do it to save time and gas :)
3. You can use brown bread or white bread.
4. You can add ginger garlic paste too.
