Today I'm happy to have Remya from Remmy's Kitchen here. Remya is one of the many good friend's I've made through blogging. She's always been there to clear my doubts and help me out with any issues I face.
I'm glad she agreed to do a post for me. Her blog is a wonderful collection of both kerala dishes and others. Do check our her space for more lovely dishes.

It is my second guest post! It is for a sweet friend Beulah! She is a good cook as well as a passionate baker. Beulah's Full Scoops is a well explained blog of good collection of baked goodies and other recipes.
Carrot halwa is an easy to prepare dessert. And it tastes heavenly.
Ingredients:
- Grated carrot : 4 cups
- Milk : 2 cups
- Ghee : 1/4 cup
- Sugar : 3/4 cup
- Cardamom powder :1/2 tspn
- Broken cashews : 4 to 6
Method:
- Heat a pan with ghee.
- Add broken cashews and fry it. Drain it and keep aside.
- Now add grated carrots to the same pan and saute it well.
- When it starts to shrink add milk to it.
- Let it boil and keep the stove in medium flame.
- Stir it occasionally.
- Once the milk starts to reduce in volume, add sugar to it and mix well.
- Now stir it continuously.
- When the mixture is almost dry add cardamom powder and broken cashews.
- Switch of the flame.Yummy carrot halwa is ready!!
Note:
- Add or reduce the quantity of sugar and ghee.
- I prefer sweet and rich halwa so used more sugar and ghee..
