Soya nuggets is one of the richest food that is available, full of protein, iron, calcium among others. This is the vegetarian equivalent of meat. My husband loves soya nuggets and prefers eating this more.
I had a packet of soya and decided to make this fried version for an evening snack. This tastes awesome, crispy and yum!

Ingredients
- Soya nuggets - about 40-50 nuggets
- Ginger garlic paste - 1 tbsp
- Curd - 2 tbsp
- Red chilli powder - 1 tsp
- Coriander powder - 1 tsp
- Cumin powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Garam masala powder - 1/2 tsp
- Corn flour - 2 tbsp
- Rice flour - 1 tbsp
- Salt - to taste
- Curry leaves - 2 sprigs
- Vinegar - 1 tbsp
- Oil - for deep frying
To wash the soya
- Milk - 1 tbsp
- Water - as needed
Method
1. Boil water in a vessel, once it starts boiling, switch off the stove. Add 1 or 2 tbsp milk and add the soya chunks in it. Keep it soaked for about 30 minutes. This is to remove the smell of soya nuggets.
2. After 30 minutes the soya will double in size. Now wash the soya in running water 2 or 3 times. Squeeze out the water completely. Cut into two if it's too big.
3. Transfer the squeezed out soya to a bowl. Add all the masalas - turmeric powder, coriander powder, garam masala powder, cumin powder and red chilli powder.
4. Also add the curd, ginger garlic paste, vinegar and salt. Mix well. Add the curry leaves. Let this rest for 15-20 minutes.
6. Heat oil in a kadai, fry the soya chunks in batches until it turns golden brown.
Notes
1. Wash the soya well to remove the raw smell.
2. Adjust the spice level according to your preference.
