A kid's favorite recipe on Children's Day! Every child is Oreo crazy, so are my nieces. So every time I visit them or they visit us, I make sure I make some sort of an oreo dessert for them. This time I made these delicious oreo cupcakes.
I had first seen these cupcakes in my friend Nicole's fb page, Salmela Family Cakes. She makes some beautiful cakes and cupcakes and this recipe caught my attention since it's easy and simple to make and obviously a kid favorite recipe!
So here's wishing all the kids a very Happy Children's Day with this delightful Oreo Cupcakes!! { For those who don't know, Children's Day is celebrated on November 14th in India, on the birthday of our 1st Prime Minister Jawaharlal Nehru, who loved children}
OREO CUPCAKES
Preparation time 10 mins | Cooking time 15 mins | Makes 16 cupcakes

Ingredients
For the cupcakes -
1. Pre heat the oven to 180 degrees C (350 C). Line a 16 cup muffin tray with paper moulds.
2. Place oreo biscuits at the base of the paper liners. You can keep a full oreo cookie or open and keep half or crush them and add to the base as shown in the picture.
3. Add the eggs (one at a time) along with vanilla extract in a bowl and beat until nice and fluffy.
4. Add the sugar and beat again. Add the oil and beat again.
5. Now add the milk and beat until it's well mixed.
6. Sift in the flour, cocoa powder, baking powder, baking soda, coffee granules and salt. Or pre sift and add in small batches. Fold gently.
7. Fill the muffin liners to 3/4 level. Bake for 15-17 minutes or until a tooth pick inserted comes out clean.
8. Let it cool for 5 minutes in the pan, then remove from the pan and let it cool completely.
For the frosting
1. While the cupcakes are cooling, prepare the frosting.
2. Chill the cream, beaters and bowl for atleast 15 minutes prior to preparing the frosting.
3. Add the vanilla extract to the cream and beat until stiff peaks are formed, about 7-8 minutes. Do not over beat as the cream will turn to butter.
4. Add the crushed oreo cookie crumbs and fold gently. Make sure there are no cookie crumbs or it will get caught in your piping bags.
5. Scoop into piping bags and refrigerate until ready to pipe.
6. Once the cupcakes are cooled, pipe any design over the cupcakes with the whipped cream.
7. Cut oreo cookies with a knife into halves and place it on top of the frosting.
* If you want to make a butter cream frosting, then follow this recipe. This is again from Salmela Family Cake fb page. I hate butter cream! Hence used a whipped cream frosting.

- 125 gms butter, softened to room temperature
- 1 1/2 cups of icing sugar
- 1 tbsp milk
- 5 Oreo biscuits, crushed to fine crumbs
Method
1. Beat butter and icing sugar together until very smooth. Add milk.
2. Add crushed Oreo's and beat until combined.
3. Make sure there are no lumps or it will get caught in your piping bag.

Notes
1. You can add butter instead of oil while making the cupcakes.
2. I measured granulated sugar but powdered it before using to help dissolve easily.
3. You can make the same kind of cupcakes using any cookie.

ReplyDeleteYou can try using curd or flax seed mixture. I've never tried to replace eggs for this recipe though.
