Baby Corn Kurma

Baby Corn is something that I tried only recently and my husband and me loved it! I tried a simple baby corn masala and it paired very well with roti. So this time while we were grocery shopping, I picked up a fresh pack of baby corn and tried this kurma and I have to say this baby corn kurma was even more tasty than the baby corn masala! Very rarely I see my husband licking his hand or plate (he's quite disciplined and never does it!) but this time I was beaming with happiness to see him enjoy the dish so much!


Baby Corn Kurma


BABY CORN KURMA
Preparation time 10 mins | Cooking time 30 mins | Serves 3

Ingredients
  • Baby Corn - 1 pack (about 15)
  • Onion - 1 large, sliced
  • Tomato - 2. large, chopped
  • Green chilli - 2, slit
  • Curry leaves - few
  • Red chilli powder - 1 tsp
  • Garam masala powder - 1/2 tsp
  • Cumin powder - 1 tsp
  • Kasuri methi - 1/2 tsp 
  • Water - 3/4 to 1 cup
  • Salt - to taste
  • Coriander leaves - 2 tbsp, chopped
To grind
  • Ginger - 1/2 inch size
  • Garlic - 6 pods
  • Roasted gram dal (pottu kadalai) - 2 tsp
  • Cashew - 5
  • Coconut (grated) - 2 tbsp
  • Kasa kasa (poppy seeds) - 1 tsp
  • Water to grind
To Temper
  • Oil - 2 tbsp
  • Cinnamon stick - 1 inch stick
  • Clove - 3
  • Bay leaf - 1
  • Cardamom - 2

Method
1. Cut the baby corn into 2 or 3 pieces, you can also cut them in the middle into 2 halves and then chop them into 2-3 pieces.



2. Grind all the ingredients under 'to grind' and set aside.
3. In a pressure pan, heat oil. Add the cinnamon, clove, bay leaf and cardamom.



4. After a minute, add the sliced onions, curry leaves and green chillies. Saute until the onions turn translucent.



5. Add the chopped tomatoes and some salt. Cook until the tomatoes are cooked.
6. Now add the ground paste and mix well. Add the masalas and cook for a couple of minutes.



7. Add the chopped baby corn and 3/4 - 1 cup of water. Mix well and pressure cook for 3 whistles. Once pressure releases, open the cooker and switch on the flame again.



8. Add the kasturi methi and give it a boil. Check for salt, add chopped coriander leaves and switch off.

Notes
1. Making this kurma in a pressure cooker is much easier since the corn gets cooked faster but you can use a pan too.
2. The kurma will thicken with time, add water accordingly.
