Instant Microwave Carrot Cake ( no eggs, no butter )

I love the flavor of carrot cake, next to chocolate cake, carrot cake is my most favorite cake! My favorite carrot cake recipe is a huge cake and when I came across this small cake, I was elated! It takes only 2 minutes to put together and I had all the ingredients readily available in my kitchen. 





The cake tastes absolutely delicious! So soft and moist! I cannot believe that microwave cakes come out so soft and moist. I made a few changes to the original recipe to suit my taste and my husband and me enjoyed this cake for an evening snack.

Serves 2

Ingredients
  • All purpose flour / maida - 6 tbsp
  • Sugar - 3 tbsp (white or brown) I used white sugar
  • Baking soda - 1/4 tsp
  • Cinnamon powder - 1/4 tsp
  • Nutmeg powder - 1/8 tsp
  • Salt - 1/8 tsp
  • Milk or Buttermilk - 4 tbsp
  • Vegetable oil - 2 tbsp
  • Carrots - 3 tbsp (grated finely)
  • Vanilla - 1/4 tsp
  • Walnuts - 1 tbsp (or any nuts)
  • Raisins - 1 tbsp

Method
1. Add the flour, sugar, baking soda, cinnamon, nutmeg and salt in a microwave safe bowl and mix well.


2. Add the oil, milk, vanilla and mix again. If the mixture is too thick, add 1/2 tbsp - 1 tbsp more milk.
3. Add the carrots, walnuts and raisin and mix well. Make sure you mix thoroughly.


4. Microwave on high for 2 minutes. Check after 1 minute and 30 seconds, if not done microwave for 30 seconds more. Check with a tooth pick or skewer.
5. Let it cool and enjoy!

Add a dollop of cream cheese for an even better carrot cake!



Notes
1. Mine was done is 2 minutes. My microwave is 900 watts. Do not over cook the cake otherwise it will become rubbery.
Start checking from 90 seconds.
2. Use brown sugar if have handy, that will intensify the color of the cake.
3. The original recipe had only 2 tbsp sugar, I felt that was less hence I added 3 tbsp sugar. Adjust according to your taste.

  6. I am so impressed by this recipe. I don't eat a lot of sweets but sometimes I just feel like a dessert and carrot cake happens to be my favourite cake too! Hubby is just arriving home tonight from a missions trip so I think I shall make this for him tomorrow night for supper. I'll let you know how I go!

    1. A basic microwave used for re-heating is enough, only thing, timings will vary. Mine is 900 watts and it took 2 minutes. Set the timings according to that.

  19. I made this recipe sooo good. I added grated ginger in it and I used 2 sugar instead of 3 and I used 1 oil instead of 2 and it was really nice. So it serves 2 how do you cut back for 1 person?
