Brinjal is my mum's favorite, we make a lot of brinjal dishes and most of all we make this brinjal fry and this brinjal curry. This is a simple and easy to make side dish for rice that you can make in no time and goes very well with rice.
BRINJAL FRY
Preparation time 10 mins | Cooking time 20 mins | Serves 2
Ingredients
Method
1. Wash the brinjals and cut into small pieces. Soak in water until it's time to cook otherwise it will change color.
2. In a kadai, heat oil. Once the oil heats up, add the mustard, cumin seeds, urad dal and curry leaves.
3. When the mustard and cumin seeds splutter, drain the brinjal and it to the kadai, saute for a few minutes.
4. When the brinjal is half cooked, add the tamarind water and continue to cook the brinjals.
5. When the brinjal is almost cooked, add the masalas and salt, mix well.
6. Continue to cook for a few more minutes and remove from flame.
Notes
1. The brinjal is cooked without adding any additional water. The water in the drained brinjal is more than enough since brinjals cook fast and easy.
2. Sometimes, my mum adds idli podi instead of these masalas and that tastes good too!
3. You can make the dish more spicy by adding some green chillies too.

- Red chilli powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Salt - to taste
- Oil - 2 to 3 tbsp
- Mustard seeds - 1/2 tsp
- Cumin seeds - 1/2 tsp
