Carrot Rice | Easy Lunch Box Recipes

Carrot Rice is my fall back recipe whenever I'm thinking of my daughter's lunch box. If nothing else comes to mind then it's carrot rice for her and she doesn't complain! 

There are two ways I make carrot rice, one is this method and the other is, I make like how I've made this Peas Pulao. Mostly for my daughter's lunch box, I make it as a pulao - Carrot Pulao (which I will post later) where the carrot is cooked well. In this method, the carrot is crunchy. We adults prefer this carrot rice and my daughter prefers the carrot pulao. Either way this is a healthy lunch box option!

Carrot Rice


CARROT RICE
Preparation time 10 mins | Cooking time 20 mins | Serves 1-2

Ingredients
  • Grated carrot - 3/4 cup
  • Cooked rice - 1 cup
  • Onion - 1 large, chopped
  • Turmeric powder - 1/4 tsp
  • Red chilli powder - 1/4 tsp
  • Coriander powder - 1/2 tsp
  • Fried peanuts - 1/4 cup
  • Coriander leaves - 2 tbsp, chopped
  • Salt - to taste
To Temper
  • Oil - 2 tsp
  • Cumin seeds - 1/2 tsp
  • Curry leaves - 1 sprig
  • Green chilli - 1
Carrot Rice

Method
1. Cook rice and set aside to cool or use left over cooked rice.
2. In a pan, heat oil. Add the cumin seeds, curry leaves, green chilli.


3. When the cumin seeds start spluttering, add the chopped onions and salt. Saute until the onions become translucent.
4. Add the turmeric powder, red chilli powder and coriander powder. Mix well and saute for 2 minutes.


5. Add the grated carrots and peanuts and mix well with the onions. 
6. Add the rice and mix until the rice is thoroughly mixed with the masala.


7. Add the chopped coriander leaves and switch off.

Notes
1. You can add ginger garlic paste too.
2. Fried peanuts is an option, that gives a nice crunch to the rice.
3. You can add some garam masala powder too.
