Double Chocolate Cake

On this 1st day of the new year, I wish all my lovely readers, a very Happy and Blessed New Year!! Lots to be celebrated in the month of December so lots of baking to be done and that makes me very happy!! 

I baked this cake first for my son's 1st birthday and then I made it again for his 4th birthday. This is a deep rich cake which we all loved. I adapted the chocolate cake recipe from here and the cake tasted absolutely wonderful. Every bite was filled with rich chocolate goodness. It's the next day today as write and I am enjoying another slice of this gorgeous beauty!

I tweaked the recipe a bit. I don't like using butter in chocolate cakes. Using oil makes the cake so moist and it stays moist. The general rule is, when you're replacing butter with oil, for every 1 cup of butter, you use 7/8th cup of oil. You can use butter if you prefer it. I also added coffee powder. I add coffee for all chocolate recipes. Just a bit of coffee takes the chocolate flavor to a whole new level. If you don't want to add, just leave it out. This recipe is definitely a keeper!

DOUBLE CHOCOLATE CAKE
Preparation time 20 mins | Baking time 35 mins |Yields - 8 pieces 

Ingredients
  • Flour  - 125 gms  
  • Cornflour  -  30 gms 
  • Cocoa  -  40 gms 
  • Baking powder  -  ½ tsp 
  • Baking soda  -  ¼ tsp 
  • Salt  -  1/2 tsp 
  • Yogurt  -  125 gms 
  • Water  -  30 gms 
  • Oil  - Little less than ½ cup (if using butter, use 115 gms)
  • Sugar  -  275 gms
  • Eggs - 125 gms (about 2.5 eggs)
  • Instant Coffee powder - 1 tsp (I used nescafe)

Method
1. Pre heat the oven to 180 degrees C. Grease and line an 8 inch cake pan.

2. Take the yogurt and add 30 gms water to it and dilute it and set aside.
3. In a large bowl, take the sugar and add oil to it. Beat the oil and sugar well. Or beat the butter and sugar. It will not blend very well and will remain gritty.

4. Add the eggs, one at a time along with vanilla and beat each egg very well.
5. Sift in the flour, cornflour, baking powder, baking soda, salt, cocoa powder and coffee powder.

6. Sift in the flour little by little and alternately add the diluted yogurt and mix well until the flour is well mixed.
7. Pour the batter into the prepared pan and bake in the pre heated oven for 35-40 minutes or until a skewer comes out clean. 

8. Once done, remove from the oven and let the cake cool for 15 minutes and then remove from the oven and let the cake cool completely.

Ingredients
  • 300g dark chocolate
  • 375g full fat cream
  • 30g butter, cut into small cubes
  1. Place the chocolate in a bowl.
  2. Bring the cream to a full boil in a thick bottomed pan.
  3. Pour it over the chocolate and let it rest for a few seconds before you being to whisk it gently to bring the emulsion together.
  4. Finally, stir in the pieces of butter until fully incorporated. Cover with plastic wrap and let it sit at room temperature until you want to use it.

Frosting the cake
1. Slice the cake into two and place it on the cake board. Soak the cake with grape juice or a simple sugar syrup (optional). 

2. Add some of the ganache and spread it evenly. 
3. Place the other layer of cake over the ganache and soak this layer too.

4. Spread some more ganache over this layer of cake and spread evenly again. 
5. Cover the sides of the cake also with ganache. With a wet cotton wipe the sides of the cake board.

6. Decorate the cake as you wish. I added some roasted chopped nuts to the sides of the cake. Let the cake set for a few hours and then enjoy the cake.

Notes
1. I soak all my chocolate cakes with grape juice. This is optional. You can leave this step or you can also soak with sugar syrup.
