Soft Instant Sooji Idli | Instant Rava Idli Recipe

Soft Instant Sooji Idli | Sooji Idli | Quick No Ferment Suji Idli - In this recipe, we will see how to make a quick, tasty and soft sooji idli. This is a quick and instant South Indian breakfast recipe that you can enjoy any day.


Ingredients 
  • Rava/sooji - 1 cup 
  • Curd - 3/4 cup 
  • Water - 3/4 cup (approximately) 
  • Salt - to taste 
  • Oil - 2 tbsp 
  • Mustard seeds - 1/2 tsp 
  • Cumin seeds - 1/2 tsp 
  • Urad dal - 1/4 tsp 
  • Curry leaves - few 
  • Channa dal - 1/4 tsp 
  • Ginger paste - 1/2 tsp 
  • Green chillies - 2 
  • Lemon juice - 1/2 tsp 
  • Coriander leaves - few chopped 
  • Baking soda - 1/4 tsp

Method
1. To make this rava idli, heat a saucepan with oil and add mustard seeds, cumin seeds, channa dal, urad dal, curry leaves, ginger paste and green chillies. Saute for few mins in oil.
2. Then add the rava and roast it for 5 mins in medium flame.
3. Then remove from flame and cool down. As it's cooling down, I removed all the green chillies as I made this for kids.
4. Then add the curd and add water little by little while mixing. You should get an idli batter consistency. You will need anywhere between 1/2 to 3/4 cup of water.
5. Add salt, coriander leaves and mix  again. 
6. Cover and let it rest for 10 mins. As it's resting, the sooji will absorb water and become soft.
7. After 10 mins, if the batter is too thick add little water and mix again to bring it to an idli batter consistency.
8. Finally add lemon juice and baking soda and mix again.
9. Grease the idli plates and add the batter in the idli mould.
10 Steam cook the idli for 8-10 mins. Let it rest for 5 mins then remove and enjoy.

Notes
1. If after resting for 10 mins, the batter is not too thick, then no need to add extra water.
2. If you don't have baking soda then add eno. Without baking soda or eno, the idli will not be soft and porous.
