Rasamalai Cake Recipe | How to make Rasamalai Cake | Indian Fusion Cakes - In this post, we will see how to make a tasty rasamalai cake. This fusion cake with all Indian flavors, tastes absolutely delicious! 



Ingredients 
  • Eggs - 2 
  • Powdered Sugar - 1/2 cup 
  • Maida - 1/2 cup 
  • Baking powder - 1/4 tsp 
  • Baking soda - a pinch 
  • Salt - a pinch 
  • Oil - 1.5 tbsp 
  • Warm Milk - 1.5 tbsp 
  • Vanilla - 1 tsp (or cardamom powder - 1/4 tsp) 
  • Saffron - 1/8 tsp 
  • Pistachio - 2 tbsp 

Frosting 
  • Whipping Cream - 1 cup 
  • Vanilla - 1 tsp 
  • Icing Sugar - 2 tbsp 
  • Rasamalai - as needed 
  • Pistachios 
  • Dried rose petals

Method
1. Take the warm milk and add some saffron to it, let this soak and infuse for 15 mins.
2. Grease and line a 6 inches cake tin with oil or butter.
3. Pre heat the oven to 180 degrees C for 15 mins.
4. Take the eggs in a bowl and add the vanilla to it. beat the eggs till it's light and fluffy.
5. Then add the powdered sugar and beat it in. Add oil and beat again.
6. In another bowl,take the maida, add the baking powder, baking soda and salt. Mix all this well together.
7. Place a sieve over the wet ingredients, add the dry ingredients into the sieve and sieve it into the bowl.
8. Combine the wet and the dry ingredients gently, don't over mix the batter.
9. Next add the saffron soaked milk and chopped pistachios. Mix well.
10. Transfer the batter into the prepared cake tin, tap the pan lightly on the counter and bake in the preheated oven for 18-20 mins or until a skewer comes out clean.
11. Wait for the cake to cool completely, then remove it from the tin.
12. Then cut the cake into two.

Frosting
1. Take the whipping cream in a bowl and add the vanilla and icing sugar to it.
2. Beat the cream till it forms soft peaks.
3. Now add 2 tbsp of rasamalai milk and add 2 drops of yellow food color.
4. Beat the cream till stiff peaks are formed.

Assembling
1. Place the 1st layer of cake on the cake board and soak the cake with the rasamalai milk. Don't soak too much.
2. Add a dollop of whipped cream and spread well.
3. Chop up some rasamalai and add it on the whipped cream.
4. Add some chopped pistachios as well.
5. Then place the next layer of cake, soak it and frost the entire cake with the whipped cream.
6. Decorate the cake as you wish with more rasamalai, whipped cream, pistachio and dried rose petals.

Notes
1. You can use cardamom powder instead of vanilla in the cake batter.
2. You can add some yellow food color to the cake batter but my saffron infused milk itself had a nice color so I did not use extra color.
