Eggless Rasamalai Cake | Fusion Dessert - In this post, we will see how to make a delicious fusion dessert, rasamalai cake. This recipe is eggless and tastes so good! 



Ingredients 
  • Maida - 1 cup 
  • Sugar - 100 gms (1/2 cup) 
  • Milk - 1/2 cup + 3 tbsp 
  • Vinegar -1 tsp 
  • Oil - 1/4cup 
  • Baking powder 1 tsp 
  • Baking soda - 1/4 tsp 
  • Cardamom powder - 1/4 tsp 
  • Rasamalai essence - 1/4 tsp 
  • Pistachios - 2 tbsp 
  • Saffron - pinch 

Frosting 
  • Whipping cream -1 cup 
  • Rasamalai essence - few drops 
  • Rasamalai milk - 2 tbsp
  • Icing sugar - 1 tbsp 
  • Yellow food color 
  • Rasamalai - as needed


Method
1. Pre heat the oven to 180 degrees C. Grease and line a 6 inch cake tin.
2. Take warm milk in a bowl and add the saffron strands in it, let it stand for 10 mins.
3. Once the saffron strands have soaked well, add the vinegar and mix. The milk will curdle.
4. Now add the oil and whisk everything well together.
5. In another bowl, take the maida and add baking powder, baking soda, cardamom powder and pistachios. Mix well.
6. To the milk, add sugar and whisk well.
7. Then add rasamalai essence and mix well.
8. Add the dry ingredients into the wet ingredients and mix till well combined.
9. If batter is thick add extra 1 tbsp milk and mix till you get a smooth batter.
10. Transfer into prepared cake tin and bake in the pre heated oven for 20 mins.
11. Once done, remove and let the cake cool completely, then remove from cake tin.
12. Frosting - Take the whipping cream, add rasamalai essence and icing sugar and beat till soft peaks are formed.
13. Then add rasamalai milk and yellow food color and beat till stiff peaks.
14. Assembling - Place the first layer of cake on the cake board, soak the cake with rasamalai milk. 
15. Then spread the whipped cream, add chopped up pieces of rasamalai.
16. Place the next layer of cake and soak with rasamalai milk. Frost the entire cake with whipped cream.
17. Add more pistachios and rasamalai to decorate the cake.

Notes
1. You can add more yellow color if you want, you can add yellow color to the cake batter too.
