Sathumavu Banana Muffins

Sathumavu means health mix powder which is made with different kinds of grains, millets and nuts which makes it really healthy small children. But obviously kids don't like eating a porridge out of this health mix powder so I come up with different ways to include this in their daily diet.

These muffins are so tasty and soft and moist and wonderful to eat. My children never figure out that these are made with sathumaavu powder!! You can make this for kids after school snack and they will love it! I assure you, adults will also love it!



Ingredients
  • Mashed bananas - 1.5 cups
  • Egg - 1
  • Oil - 1/3 cup
  • Jaggery - 1 cup
  • Milk - 1/4 cup
  • Sathumavu powder - 1.5 cups
  • Cocoa powder - 1/4 cup
  • Baking soda - 1 tsp
  • Baking powder - 1/4 tsp
  • Mini chocolate chips / Chopped walnuts - 1/2 cup
  • Salt - 1/4 tsp
  • Vanilla extract - 1 tsp

Method
1. Pre heat the oven to 180 degrees C. Get the muffin tray ready.
2. In a large bowl, add the mashed bananas.
3. Add powdered jaggery and beat till well combined.
4. Add the oil, egg and milk and beat again.
5. For the dry ingredients - Into a sieve add the sathumaavu powder, cocoa powder, baking soda, baking powder and salt.
6. Mix together and sieve 2 or 3 times.
7. Add vanilla in the wet ingredients and mix.
8. Now add the dry ingredients into the wet ingredients.
9. Add the walnuts and chocolate chips and mix gently till fully combined.
10. Fill the liners to 3/4th. Do not overfill the liners.
11. Bake in the pre heated oven for 10-12 mins (I made mini muffins). For normal sized muffins, bake for 18 mins.
12. Once the skewer comes clean, remove the muffins and bake the next batch.

Notes
1. I always make mini muffins of these healthy muffins as it's easier for the children to eat.
2. Since this is a healthy muffin, you can skip the chocolate chips but my kids and I love a little bit of chocolate chips.
3. Make sure you use the ripest bananas for the tastiest muffins.
