Mixed Vegetable Kurma Recipe

I love this kurma / korma! Well, I think almost everybody will love this. This goes well with poori, roti, paratha, idiyappam, dosai - almost everything! There are so many ways to make this but trust me, this version is so good. It tastes just like the kurma served in hotels! 


Mixed Vegetable Kurma


Ingredients
  • Onion - 2 medium
  • Tomato - 2 medium
  • Potato - 2
  • Beans - 15
  • Carrot - 3 medium sized
  • Peas - 1/2 cup
  • Ginger garlic - 2 tsp
  • Green Chillies - 2
  • Curry leaves - few
  • Turmeric powder - 1/4 tsp
  • Garam Masala powder - 1 tsp
  • Red chilli powder - 1 tsp
  • Coriander leaves - 2 tbsp chopped
  • Salt to taste
To grind
  • Coconut - 3 tbsp (grated)
  • Fennel seeds - 1 tsp
  • Cashew nuts - 5
  • Roasted gram dal (pottu kadalai) - 2 tsp
  • Water - to grind
To Temper
  • Oil - 2 tbsp
  • Cinnamon - 1 inch piece
  • Clove - 4
  • Bay leaf - 1 big or 2 small
  • Cumin seeds - 1 tsp
  • Cardamom - 1

Method
1. Grind together the coconut, fennel seeds, cashew and gram dal to a fine paste adding the water required to make a paste. Chop the onions and tomatoes. Chop all the vegetables to a medium size.
2. In a pressure pan, add oil and allow it to heat up. Add the cinnamon, cloves, bay leaf and cumin seeds. Wait for the cumin seeds to splutter.


3. Add the chopped onions. Add the green chillies and curry leaves. Add salt. Salt helps the onions cook faster. Saute till the onions change color and brown slightly.
4. Add the ginger garlic paste. Saute till the raw smell of ginger leaves.


5. Add the tomatoes. Mix well. Allow the tomatoes to cook well and become mushy.
6. Add the masalas, the turmeric powder, red chilli powder and garam masala powder. Mix well.


7. Add the ground paste. Mix well and allow to cook for a couple of minutes.
8. Add the vegetables. Add a cup of water and mix everything well.
9. Close the lid. Wait for 3 whistles, simmer after the 1st whistle. 


10. Once the pressure releases, open the cooker, add chopped coriander leaves and mix well.
11. If your not using a pressure cooker to make this, then add enough water to cook the vegetables. Keep the lid closed and cook for about 10 minutes until the vegetables are cooked thoroughly.

Notes
1. Use any vegetables you want. 
2. This kurma thickens with time so add water accordingly.
