Marble Cake Recipe / Vanilla and Chocolate Marble Cake

Marble cake is one of my most favorite 'simple' cakes. I love a good marble cake and I have tried many recipes and this is my most favorite and I've made this recipe many times! The mild combination of vanilla and chocolate tastes really good. Some in my family don't like a full chocolate cake (weird, I know!) so for them I make this cake. The light mix of chocolate takes the vanilla cake to a whole new level.

You can make a marble cake with any of your favorite sponge cake recipe. If you have a favorite banana cake, you can make a banana marble cake using this method or maybe an orange marble cake.

I got this recipe from here and this is a wonderful cake. So soft and moist and fluffy. This is such a lovely chocolate and vanilla swirled marble cake, you don't want to miss this!
You can have this cake as it is or slather a rich ooey gooey layer of ganache over it and enjoy!

MARBLE CAKE
Preparation time 30 mins | Baking time 40 mins | Serves 8-10

Ingredients
  • Unsalted butter - 1/2 cup (113 gms) at room temperature
  • Sugar - 1 cup 
  • Plain flour/Maida - 1 and 3/4 cups 
  • Baking powder - 1.5 tsp
  • Salt - 1/2 teaspoon 
  • Eggs - 3 large 
  • Vanilla extract - 1.5 tsp
  • Buttermilk2/3 cup 
  • Cocoa powder -1/3 cup
  • Hot Water - 1/4 cup + 1 tsp

Method
 Pre heat the oven to 180 degrees C and grease and line the cake tin. You can use an 8 inch pan or 9 inch pan or even a 9*5*3 inch loaf pan.

1. Beat the butter and sugar until light lemon-colored and fluffy. 
2. Add the eggs, one at a time and vanilla extract,  beating well in between each addition.



3. Sift in the flour, baking powder and salt. Sift in little by little or pre sift and then add in batches.
4. Adding the flour to the wet ingredients should be done in small batches, alternating with buttermilk so that everything is well mixed. 



5. Add 1/3rd of the flour to the wet batter and add half of the buttermilk and mix. Add another 1/3 of the flour and then the last of the buttermilk and mix.  Finally, mix in the last 1/3 of the flour.



6. In another separate bowl, mix 1/3rd cup of cocoa powder with 1/4 cup + 1 tsp of hot water. Make a thick paste of the cocoa powder.
7. Remove a little less than half of the batter to another bowl. This will be the chocolate batter. Add the cocoa paste to this bowl and mix well to make the chocolate batter.



8. Place the batters in the pan, alternating with the vanilla and chocolate batter.
7. Swirl the batter lightly using a spatula to create a marbled effect.



8. Place in the oven and bake for about 40 minutes. The cake is done when it has browned slightly and a cake tester comes our clean when inserted into the middle.  Cool on a rack for 15 minutes and then remove from pan and let cool completely.

Notes
1. Use a thick spatula to make the swirls. Using a tooth pick does not give a nice marbled look.
2. Don't swirl too much, if you swirl too much, it will look just like another chocolate cake or will look muddy and the marble effect will be lost.
3. I measured my sugar and powdered it to help dissolve easily.
4. You can even add a tsp of powdered sugar to the cocoa paste if you want to cut down on the bitterness of the cocoa powder.
5. Also you can add a pinch of coffee powder to the cocoa paste. I did not want to make my chocolate batter very bitter hence avoided the coffee. If you're adding some sugar to this chocolate batter, then you can add the coffee powder to balance out the flavors.

  4. very nice marble cake dear ; in fact i dot like the whole 50 50 vanilla chocolate marble cake.. may be i will keep the ratio to 70 to 30.. your marble cake turned out so gorgeous; lovely wonderful recipe with a great tempting looks of a cake... i use fork for making swirls in marble cake.. it works good too.. it gives nice linings ; and dear thanks for sharing that we can use spatula too for making swirls :) good work dear

  12. looks very good , one question could i use the measurement for the chocolate batter ( Cocoa powder -1/3 cup
    Hot Water - 1/4 cup + 1 tsp ) to any cake batter ? or would this measurement change .

    1. It will change with each different recipe. This measure is only for this particular recipe.

    1. I think it is because I use a convection microwave for my bakes and not the traditional OTG. I sometimes get annoyed that it doesn't brown on top!
