We love cheesecakes in our house, I made this strawberry version
to take it to my in laws house and we all enjoyed this flavor. Tastes awesome!
Of course, I have used cottage cheese to make this cheesecake, like all my
other cheesecakes but you can make it with the traditional cream cheese too.
EGGLESS NO BAKE STRAWBERRY CHEESECAKE
Preparation time 20 mins | Setting time - 4-6 hours | Serves - 10 slices
Ingredients
For the base
·
Digestive biscuits - 35
·
Butter - 80 gms
For the cheesecake
·
Strawberry puree - 350 gms
·
Cottage cheese - 200 gms
·
Condensed milk - 400 gms
·
Fresh cream - 250 ml
·
Vanilla extract - 1 tsp
·
Sugar - 2 tbsp
·
Salt - 1/2 tsp
·
Gelatin - 2.5 tbsp (or) agar agar - 2 tbsp
·
Water - 1/2 cup
For the glaze
·
Strawberry puree - 1/2 cup
·
Sugar – 1 tbsp
·
Gelatin - 2 tsp
·
Water - 3 tbsp

Method
For the base
1. Grease an 8 inch springorm pan
with butter or oil.
2. Transfer the biscuits to a
bowl. Melt the butter and add it to the biscuits. Mix well. The mixture
will resemble wet sand.
3. Transfer this mixture to the
greased pan and press around. Leave it in the fridge until we prepare the
cheesecake.
For the cheesecake
1. Wash and hull the strawberries
and blend about 35 strawberries until it's pureed. The puree should weigh 350 grams.
2. Transfer the strawberries to a
saucepan and add add 2 tbsp sugar and cook the puree for a few minutes until
it's slightly thickened. Set aside to cool slightly.
3. Sprinkle the gelatin in half cup
of water and set aside for 5 minutes. Then heat it up in a microwave for 30
seconds. Leave it to cool down completely. It will become an almost clear solution.
4. In a largest jar of a blender/food processor, add
the cottage cheese and condensed milk and blend till smooth.
5. Add the fresh cream and blend again. Add the strawberry puree, vanilla extract and salt and blend again.

6. Pour this mixture in a large
bowl. Add the cooled gelatin and mix well.
7. Bring the springform pan from the
fridge and pour this mixture over the biscuit layer and tap lightly.
8. Cover the pan and refrigerate
until well set. I left it for 8 hours.
For the glaze
3. Pour the cooled gelatin into the
strawberry puree and mix well.
4. Bring the springform pan from the
refrigerator and pour the strawberry puree over the set cheesecake.
5. Cover and refrigerate again for about 4
hours or until well set.
Notes
1. Use any biscuit of your choice. I have used marie digestive biscuit.
2. Increase the sugar if your strawberries are not too sweet.
3. If you don't use gelatin, use agar agar. If using agar agar, add the powder to hot water, mix it and then add the agar agar to the strawberry puree as you heat it up with sugar. Bring it to a rolling boil. Agar agar needs a rolling boil to activate. Let it cool to almost room temperature. Keep stirring often so that the agar agar does not form lumps. Please Note - I have never used agar agar, use as per your discretion.
