Bitter Gourd is not everybody's favorite because of it's bitterness. But when cooked right, there is no bitterness and tastes great too! This is another one of my dad's favorite like the athalakkai kuzhambu and athalakkai poriyal so my mum makes this atleast twice a week.
PAVAKKAI PORIYAL | BITTER GOURD STIR FRY
Preparation time 10mins | Cooking time 20 mins | Serves 2-3
Ingredients
Method
1. Wash the bitter gourd, slit it open and remove the seeds.
2. Soak them in salted water for 10 mins to reduce the bitterness. This step is optional.
3. In a pan, heat oil. Add the mustard seeds, urad dal and curry leaves.
4. Once the mustard seeds splutter, add the bitter gourd. Keep stirring the vegetable for a few minutes.
5. Add the coriander powder and turmeric powder and chilli powder. Mix well. Add the required salt.
6. Keep stirring the vegetable for about 5 minutes until the bitter gourd starts to change color and shrinks a bit.
7. Garnish and serve.
Notes
1. You can add onions too.
2. Some add sugar to reduce the bitterness of the vegetable. We son't add sugar. If you prefer you can add about 1/2 tsp of sugar or jaggery.
3. You can add more masalas too.
