Samai Vegetable Upma | Little Millet Vegetable Upma

Another millet recipe from me! I am cooking a lot with millets now a days and we enjoy them a lot. I have posted a kuthiraivali upma earlier and this time I made a vegetable upma with samai. This is equally good and makes for a healthy and filling breakfast or dinner. I made this vegetable upma for dinner with some left over mixed vegetable curry I had from that afternoon, you can use fresh vegetables.


Samai Upma


SAMAI VEGETABLE UPMA
Preparation time 10 mins | Cooking time 20 mins | Serves - 2

Ingredients
  • Samai - 1 cup
  • Water - 2.5 cups
  • Onion - 1
  • Carrot - 1 medium, chopped
  • Beans - 10, chopped
  • Peas - 1/4 cup
  • Potato - 1, chopped
  • Turmeric powder- 1/4 tsp
  • Garam masala - 1/2 tsp
  • Green chilli - 2
  • Coriander leaves - 2 tbsp, chopped
  • Salt - to taste
To Temper
  • Oil - 2 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/4 tsp
  • Curry leaves - 1 sprig
  • Channa dal - 1/4 tsp

Method
1. Wash the samai and soak in water for 20-30 minutes. Chop the vegetables and put it in a pressure cook with some water and cook for 2-3 whistles. Set aside. 



2. In a pan, add the oil. Once the oil heats up, add the mustard seeds, channa dal, urad dal and curry leaves.
3. When the mustard seed splutters add the chopped onions and slit green chillies. Saute until the onions turn translucent.



4. Add 2.5 cups of water and let it boil. Then add the cooked vegetables. If not pressure cooking the vegetables, add it directly to the water, close the lid and let the vegetables cook for 10 minutes or until cooked.
5. Add the turmeric powder, garam masala and salt and mix well. Here is where I added the cooked left over vegetable curry.



6. Now add the drained samai and mix well, close the lid and cook till the water is absorbed.

Serve hot with chutney or sambar.

Notes
1. Serve immediately otherwise millets get very dry.
2. Pressure cooking the vegetables saves time, if not add it to the pan and cook for 10 minutes.
3. Adding turmeric powder and garam masala is optional. I add it to increase the flavor.
