Divine Chocolate Cake

This is truly a divine chocolate cake! So rich, so moist, it is utterly a chocolate lover's delight to eat this cake! I made this cake for a birthday party and it turned out to be an excellent choice! Frosted this cake with some delicious thick chocolate fudge frosting and it was too good to resist! You can simply use thick ganache to frost the cake too.

DIVINE CHOCOLATE CAKE
Preparation time 20 mins | Baking time 40 mins | Serves 10-12

Ingredients
  • Softened butter - 125 gms (9 tbsp)
  • Cocoa powder - 1/2 cup (50 gms)
  • Eggs - 2
  • Dark brown sugar - 1/2 cup (100 gms)
  • Caster sugar - 3/4 cup (150 gms)
  • Boiling water - 1 cup (250 ml)
  • All purpose flour (maida) - 1 and 1/2 cup (225 gms)
  • Baking powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Instant coffee granules - 1/2 tsp
  • Salt - 1/4 tsp
  • Vanilla extract - 1 tsp
Divine Chocolate Cake

Method
1. Pre heat the oven to 180 degrees C (or) 350 degrees F. Grease and line a 9 inch pan.
2. In a bowl, add the cocoa powder, dark brown sugar, coffee granules and the boiling water. Whisk well and set aside.



3. Cream the butter and caster sugar until pale and fluffy. Add the eggs and vanilla and beat again.
4. Now sift in the flour, baking soda, baking powder and salt. Fold gently.



5. Then add the cocoa+brown sugar mixture (make sure you scrape the bowl well and add in). Beat again until it's all well mixed.
6. Pour the batter into the prepared tin and bake in the pre heated oven for 4o mins or until a skewer comes out clean.



7. Remove from oven and let cool for 10 mins and then remove the cake from pan and cool completely.

Frost the cake as you wish. I used chocolate fudge frosting.

Notes
1. You can bake this in two 8 inch pans too. The baking time will vary.
2. If you don't have caster sugar, use super fine sugar.
