I never thought of making this into a post but then I wanted to share that this lovely curd rice can be made more healthy by making it with brown rice instead of white rice. We have started including brown rice in our diet and I tried out this simple and easy curd rice. It came out very well and the taste was just as good! I make millet curd rice too and I like both kinds of curd rice. As usual goes well with just a simple pickle.

BROWN RICE CURD RICE
Preparation time 20 mins | Cooking time 15 mins | Serves 2-3
Ingredients
- Brown rice - 1 cup
- Water - 2.5 cups
- Homemade Curd - 1 cup
- Milk - 1/2 cup (adjust to requirement)
- Salt - to taste
- Oil - 1 tsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1/4 tsp
- Red chilli - 1
- Curry leaves - 1 sprig
Method
2. Mash the cooked rice well. Mash it when it's hot so you can mash it very well.
4. Adjust the consistency and taste by adding more or less milk.
6. When the mustard seeds splutter, remove from fire and add it to the curd rice.
Notes
1. The amount of water required to cook each brand of brown rice differs. The brand I use, requires only 2 cups of water. But I used 2.5 since I wanted the rice to be a little mushy for the curd rice consistency.
2. I made a very simple curd rice. If you want to make it more special, refer my curd rice post. You can add all of those ingredients to make it more tasty.
3. This rice is to be eaten immediately. If you want to pack this for lunch, then you need to add less curd and more milk.
