My husband and me love baby corn but my kids are not so thrilled about it yet. Sometimes my daughter likes it and sometimes she doesn't so I make this one in a while. My most favorite thing to do with this baby corn is make a kurma or a simple masala.
This time I thought of trying out this stir fry and it paired very well rice. It is easy to make and tastes great too!
BABY CORN PORIYAL
Preparation time 10 mins | Cooking time 15 mins | Serves 2
Ingredients
Method
1. Chop the baby corn into small rounds.
2. In a kadai (I used a 2L pressure cooker), add the oil. Once the oil heats up, add the mustard seeds. When the mustard seeds splutters, add the urad dal, hing, curry leaves, green chilli.
3. When the urad dal browns, add the chopped onion and salt and saute until the onions turns translucent.
4. Add all the masalas and cook for 3 minutes.
5. Now add the baby corn and mix in with the masala. Saute for 2 minutes.
6. Add 1/4 cup of water and pressure cook for 2 whistles or close the kadai and wait for the baby corn to cook well.
7. Open and add some coriander leaves.
Notes
1. I use pressure cooker for quick early morning cooking. It works well for me. You can use an open pan/kadai.
2. After adding the masalas, you can add 2 tbsp of water to bring it all together.
