Adai Dosai | Adai Dosai Recipe - In this post, we will see how to make a protein rich and healthy adai dosai.


Ingredients
  • Idli rice - 1 cup
  • Tuvaram paruppu (toor dal) - 1/2 cup
  • Kadala paruppu (channa dal) - 1/2 cup
  • Pasi paruppu (moong dal) - 1/4 cup
  • Ulundu (urad dal) - 1/4 cup
  • Vendhayam (fenugreek seeds) - 1/2 tbsp
  • Ginger - 1 small piece
  • Garlic - 5
  • Red chillies - 5 to 6
  • Onion -2,chopped
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Curry leaves - handful
  • Coriander leaves - handful
  • Hing - 1/4 tsp
  • Salt - to taste

Method
1. In a bowl, add the idli rice, toor dal, channa dal, moong dal, urad dal and fenugreek seeds. Wash well.
2. Then add enough water and soak for 4-5 hours. While it's soaking, add some red chilles.
3. After 5 hours, add the dal mixture into a large mixee jar. Add some ginger and garlic, cumin seeds and fennel seeds. Add little water and grind to a coarse paste.
4. Transfer to a bowl. Let it ferment for 2-4 hours.
5. After 4 hours, before making dosa, add salt, hing, onion, curry leaves, coriander leaves into the batter and mix well.
6. If the batter is too thick add little water. Otherwise leave as such, as adai dosa batter should be thick only.
7. Heat dosa tawa and grease with oil. Then start making dosa, add some oil around the dosa, cover and cook for 3 mins.
8. Then flip the dosa and cook for another min and remove.

Notes
1. You can also add moringa leaves to the batter along with curry leaves and coriander leaves.
