How to make soft Paneer at home | Masala Paneer Recipe | Homemade Paneer

In this post we will see how to make soft paneer at home. We will also see how to make masala paneer.



Ingredients

Masala Paneer

Plain Paneer
  • Milk - 3 L
  • Lemon Juice - 3 tbsp

Method

Masala Paneer
1. Take the milk in a saucepan and boil the milk. 
2. As the milk is boiling, add all the spice powders. Cumin powder, coriander powder, pepper powder, cpriander leaves, red chilli flakes and salt. Mix well.
3. When the milk starts boiling, add the lemon juice. The milk will split immediately.
4. Switch off the flame. Strain this mixture using a cloth and strainer.
5. Fold and let it rest for 20 mins.

Plain Paneer
1. Take the milk in a saucepan and boil the milk. 
2.When the milk starts boiling, add the lemon juice and mix well. 
3. As soon as the milk splits, switch off the flame.
4. Strain the mixture using a strainer and cloth. Wash the paneer with some water.
5. Place a heavy vessel over it and let the water drain out for 30 mins.
6. After 30 mins, you can cut and store the paneer.

Storage - Cut the paneer into desired shapes and put it in a box, add water and keep in fridge. You can store upto 1 week.

Notes
1. You can use lemon juice, vinegar or homemade sour curd to split the milk.
2. While the milk is boiling, you can add some fresh cream too, then you will get soft malai paneer.
3. As soon as the milk splits, switch off the flame, only then the paneer will be soft.
4. Don't throw the whey water, you can use it to make chapathi dough or use it in gravies.
5. Don't drain all the water out, then the paneer will become dry. There has to be some moisture in the paneer to remain soft.
6. For the masala paneer, you can add any variety of masala of your choice. You can add only garam masala, if that's what you prefer.
