Murungai Keerai Sadam | Moringa Rice | முருங்கை கீரை சாதம்

முருங்கை கீரை சாதம் | Murungai Keerai Sadam | Moringa Rice - In this post, we will see how to make a quick, tasty and healthy murungai keerai rice. You can pack this for lunch boxes too.


Ingredients
  • Murungai Keerai - 2 cups
  • Rice - 1/2 cup (uncooked)
  • Oil - 2 tbsp
  • Onion - 20 small onions
  • Pepper powder - 1 tsp
  • Cumin powder - 1 tsp
  • Salt - to taste
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Urad dal - 1/4 tsp
  • Perungayam - 1/8 tsp
  • Red chillies - 2
  • Curry leaves - 1 sprig

Method
1. Heat oil in a kadai, add the mustard seeds, urad dal, cumin seeds, hing, red chillies and curry leaves.
2. Then add the chopped shallots. Add little salt and saute the onions till it turns golden brown.
3. Add some crushed garlic. Then add 1 tsp pepper powder and cumin powder and cook for 2 mins.
4. Add cleaned and washed moringa leaves. Let the leaves cook for 5-6 mins.
5. Add cooked rice and mix in. If needed add more salt and pepper and mix.
6. Add roasted peeled peanuts and mix in with the rice and serve.

Notes
1. Instead of adding the roasted peanuts, you can add roasted cashews too.
2. If you don't have shallots, add 1 big onion.
