Pudalangai Kara Kuzhambu | Snake Gourd Kuzhambu | புடலங்காய் குழம்பு

புடலங்காய் குழம்பு | Pudalangai Kara Kuzhambu - In this post, we will see how to make a spicy South Indian Kara Kuzhambu. This kuzhambu is made with pudalangai and it's easy to make and tasty to eat!


Ingredients
  • Pudalangai - 1 or 2
  • Onion - 1
  • Tomato - 2
  • Coriander powder - 2 tsp
  • Red chilli powder - 1 tsp
  • Kuzhambu masala - 1 tsp
  • Salt - to taste
  • Tamarind juice - 1/4 cup
  • Oil - 3 tbsp
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Vendhayam - 1/4 tsp
  • Urad dal - 1/2 tsp
  • Curry leaves - 1 sprig
  • Perungayam - 1/4 tsp

Method
1. Clean and chop the snake gourd. Soak the tamarind in water.
2. Heat oil in a kadai and add mustard seeds, cumin seeds , methi seeds, urad dal, curry leaves, red chillies and hing.
3. Then add some crushed garlic saute till it's flavorful and aromatic, then add chopped onion.
4. Then add chopped tomatoes. As the tomatoes are cooking, add coriander powder, red chilli powder and kuzhambu powder and some salt.
5. Mix well, if needed add little water and cook the tomatoes for 5 mins.
6. When the tomatoes are well cooked, add the chopped snake gourd and mix with the masala.
7. Add 1/4 to 1/2 cup water and cover and cook the snake gourd for 5 mins.
8. Then add the tamarind water and mix well. Add 1/2 cup extra water and let it boil for another 5-8 mins.

Tasty snake gourd kara kuzhambu is ready.

Notes
1. If you want a thick kuzhambu, then reduce the amount of water we add.
