Multigrain Health Mix Powder Chocolate Muffins Healthy Chocolate Muffins - In this post, we will see how to bake some healthy and super tasty multigrain health mix powder chocolate muffins. 



Ingredients (Makes about 70 mini muffins or 20 regular sized muffins) 
  • Melted butter - 113 gms (1/2 cup) 
  • Multigrain powder - 2 cups 
  • Jaggery - 1.5 cups 
  • Eggs - 2 
  • Buttermilk - 1 cup 
  • Baking powder - 1 tsp 
  • Baking soda - 1 tsp 
  • Salt - 1/2 tsp 
  • Cocoa powder - 1/2 cup 
  • Walnuts - 1/3 cup 
  • Chocolate chips - 1/2 cup 
  • Instant coffee powder - 1 tsp

Method
1. I have used homemade sathumavu powder, if you don't have this powder, you can buy from any supermarket.
2. Take about 1/2 tsp of sathumavu powder and add it to the walnuts and chocolate chips and mix well so they don't sink to the bottom of the cake while baking.
3. Pre heat the oven to 180 degrees C for 15 mins.
4. Take the butter in a bowl and beat the butter for a min.
5. Then add the jaggery and beat again.
6. Add the eggs and beat till the mixture is light and fluffy.
7. Stop the beater in between and scrape the bottom and sides of the bowl
8. Add the buttermilk and beat again.
9. Place a sieve over the bowl and add the health mix powder, cocoa powder, baking powder, baking soda, salt and coffee. Mix well and sieve into the bowl.
10. Combine the wet and the dry ingredients. Be gentle, don't over mix the batter.
11. Add the walnuts and the chocolate chips and mix well.
12. Line a muffin tray with paper liners. Add the batter into each liner. Fill only half to 2/3rd of the liners. 
13. Tap the tray on the counter to remove air bubbles and bake in the pre heated oven for 10-13 mins or until a skewer comes out clean.
14. Then bake the remaining muffins.

Notes
1. Do not over mix the batter as we are using sathumavu powder be gentle while combining the wet and dry ingredients.
2. You can leave the chocolate chips out as we are baking a healthy muffin. Replace chocolate chips for more walnuts. I added a little for my kids to be tempted to eat.
3. Instead of these mini muffins, you can make regular sized muffins. In that cake bake for 16-18 mins.
4. It's better to make mini muffins while baking with alternate flour as it's easier for the kids to eat.
