Carrot Juice Recipe

Many years ago I fell sick and I was advised bed rest for few weeks, during that time, one of my father's friend came to visit me. He is a naturopathy doctor and he gave me a 'medicine' or rather a solution to the road to recovery. And that was carrot juice. He told me to blend carrots along with a small piece of ginger and some coriander leaves and drink this juice everyday and he challenged me to see the difference for myself. He asked me to drink it without any sugar. Today I made the same drink that I used to drink regularly years ago, only difference is that I added some sugar in an attempt to tempt my daughter to drink. Of course I failed in my attempt! But that's another story! 
This juice is full of fiber, anti oxidants, vitamins and minerals, so don't hesitate to try this delicious drink!




CARROT JUICE
Preparation time 5 mins | Cooking time 0 | Serves 1

Ingredients

  • Carrots - 1 cup (grated)
  • Water - 1/2 cup
  • Ginger - 1 cm piece (optional)
  • Coriander leaves - few (optional)
  • Salt - a tiny pinch
  • Sugar - 2 tsp (or honey)
  • Lime juice - 1/2 tsp (optional) I did not add




Method
1. Wash and lightly peel the carrots and grate them finely.
2. Transfer the carrots to the blender. Add the ginger piece and coriander leaves. 
3. Add sugar or honey to taste. Add a tiny pinch of salt.
4. Add some water and blend well.
5. Strain the juice. Return the pulp to the blender, add a little more water and blend again. Strain the juice. Do this twice to squeeze all the juice out.
6. You can serve as it is or serve it chilled. 



Notes
1. Skip the ginger and coriander if you don't prefer it and have it just as it is.
2. This is a thick juice, full of carrots. You can add more water and make it thinner.
3. Skip the sugar if you don't prefer. The carrots are sweet by itself. Or add honey instead.
