This is my comfort food, the ultimate comfort food! I'm sure it's the same for many South Indians. It's amazing how such a simple ingredient can make such a delicious food. It is so simple and easy to make. What I have posted below is the special curd rice made with seasonings. You don't have to add all the ingredients that I have added, what you add depends on the availability of each ingredient. You can add what you have and leave the rest out and the curd rice will still taste yummy!
CURD RICE
Preparation time 15 mins | Cooking time 10 mins | Serves 2
Ingredients
Method
1. Wash the rice well and pressure cook with 1.5 cups of water for about 3-4 whistles.
2. Once done mash the rice well. Add boiled milk and mash again. If the milk is hot, it mashes really well.
3. If using hot milk, allow this to cool down completely. Then add the curd and mix again.
4. Add all the other ingredients and mix again.
5. Heat oil in a small pan, add mustard seeds, urad dal, red chillies, curry leaves and hing.
6. Once the mustard splutters, add it to the rice and mix well.
7. You can serve this warm or chilled with pickle.
Notes
1. If you want to have immediately this measure will be perfect.
2. If you want to pack this for travel or lunch box, make sure you add less curd and more milk. Otherwise the curd rice will become very sour.
3. You can skip the addition of all these ingredients and just mix curd and some milk with rice and have a quick curd rice. This is a special curd rice.
4. Do not add curd to hot milk. If you are mashing the rice with hot milk then do not add curd immediately. Wait for the rice to cool down completely and then add curd.
5. You can add butter while mixing with curd. Can also add roasted cashews to make it more rich.
6. Use thick curd for a more creamy curd rice.
7. Avoid chillies in curd rice, if you want to give children.
8. If you are cooking rice just to make this curd rice then cook with little extra water than usual and leave it to cook for a little longer than usual. The measure I have given works well.
9. If you're using already cooked rice then mash well. Curd rice tastes best, when it is mashed.
