Mushroom has been a favorite of mine ever since I tasted it first in my mother in law's house. And knowing the health benefits of mushrooms, we make it often. I used button mushrooms for this recipe, which are easily available here.
Ever since I made the Kadai Paneer, I have been wanting to make Kadai Mushroom as well and this turned out to be too good! This recipe can be made as dry, semi dry or a gravy. I made it semi dry.
KADAI PANEER
Preparation time - 10 mins | Cooking time 15 mins | Serves 2
Ingredients
Method
1. Clean the mushrooms and chop them into pieces. Chop the onions, tomatoes and capsicum and set aside.
2. In a kadai, heat oil and cumin seeds and green chilli. Once the cumin seeds splutter add the onions and salt and saute till the onions turn translucent in colour.
3. Then add the ginger garlic paste and saute till the raw smell leaves. For about 2-3 mins.
4. Add the tomatoes and saute for a few minutes.
5. Add the masalas and mix well. Cook for a couple of minutes. Add the chopped capsicum. Make sure the capsicum retains its crunch and does not become too mushy.
6. Add the mushrooms, cover and allow it to cook till the mushrooms are soft. For about 3-5 minutes in medium flame, stirring often.
7. Once the mushrooms are well blended and well cooked, add the kasturi methi and mix well.
8. Add the chopped coriander leaves, check for salt and switch off.
Goes well as a side dish with dosai, naan, roti or even with plain pulao.
Notes
1. If you want a gravy, add 1/2 cup of water after you add the mushrooms and allow to cook. I wanted a dry gravy hence did not add water.
2. This is a very spicy dish, adjust the spice level as per your preference.
Until next time,
