Mushroom Pulao

Mushrooms are one of my most favorites! And the best part is, my husband also loves mushrooms, unlike paneer. He hates paneer so I can't make a lot of paneer dishes but since we both love mushrooms, I make plenty of mushroom dishes. Our most favorite mushroom recipe, is mushroom biryani. I make this biryani very often and we enjoy it a lot. This time around I decided to try mushroom pulao and this was another hit! 



Mushroom Pulao


Pulao is always very delicious and a favorite among kids too but you need to have a nice, spicy side dish to make it even more delicious. 

Ingredients
  • Button Mushrooms - 20
  • Basmati rice - 2 cups
  • Onion - 2 medium, sliced
  • Green chilli - 2
  • Ginger garlic paste - 2 tsp
  • Garam masala powder - 1 tsp
  • Cumin powder - 3/4 tsp
  • Mint leaves - a handful
  • Coconut milk - 1/2 cup
  • Coriander leaves - 3 tbsp, chopped
  • Salt - to taste
To Temper
  • Oil / Ghee - 2 tbsp
  • Cinnamon stick - 1 inch stick
  • Clove - 4
  • Bay leaf - 1
  • Star anise - 1
  • Cardamom - 1
Mushroom Pulao


Method
1. Wash the rice and soak for 20 minutes, drain and set aside. Chop the mushrooms and set aside.
2. In a pressure cooker, add oil/ghee. Once the oil heats up, add the cinnamon, clove, cardamon, bay leaf and star anise. 



3.Wait for 30 seconds until a nice aroma emanates then add the sliced onions. Add salt and green chillies and saute the onions until they turn translucent.
4. Now add the ginger garlic paste. Saute until the raw smell of ginger and garlic leaves.



5. Add the garam masala powder, cumin powder and mix well. Add the mint leaves and mix along with the masalas.
6. Add the chopped mushrooms and mix well. Cook for a couple of minutes.



7. Add the coconut milk and mix again. Add the drained rice and mix in.
8. Add 3.5 cups of water. Check for salt and add the chopped coriander leaves.



9. Cook for 3 whistles, simmer after the 1st whistle.
10. Once the pressure releases, open the pressure cooker and fluff the rice with a fork.

Serve with Non Veg or Veg curry and raita

Notes
1. Chop the mushrooms any way you like. I prefer chopping into 3 to 4 pieces.
2. Adding water is very important. If you add more water, you will get a mushy pulao.
3. Use good quality long grain (basmati) rice.
4. I have used 1:2 ratio (rice : water). This might change for different brands of rice. Keep that in mind while adding water. You can follow the ratio you normally do for long grained rice.
5. If you don't prefer coconut milk, add 1 cup of plain milk. Coconut milk enhances the flavor. If you don't prefer both, just add water.

6. You can add 1/2 cup of fresh peas to this too.

  2. Yipppeee...i love mushrooms too!! I dont add coconut milk, as you say, it will be more tasty with coconut milk. Will try next time. But I am not lucky enough as my hubby hates both mushroom and panner whereas i am a big lover of both :(
