Paneer is Indian Cottage Cheese and one of my favorite! I think everybody loves paneer, except of course my husband! He doesn't like paneer so I don't get to make it very often. But if I do make it, he will eat without fussing! So today made paneer mainly for me and my daughter and my husband who is not a fan, actually enjoyed it. This tastes very good!
KADAI PANEER
Preparation time - 10 mins | Cooking time 15 mins | Serves 2

Method
1. Cut the paneer into cubes, fry them in 1 tsp oil until slightly golden brown or drop it in warm water or milk for a few minutes, remove and squeeze out the water completely and set aside. This is to make the paneer soft.
2. Chop the onions, capsicum and tomatoes.
3. In a kadai, add oil. Once the oil heats up, add cumin seeds and green chilli..
4. After the cumin seeds splutter, add the chopped onions. Add salt, to make the onions cook faster.
5. Once the onions change color, add the ginger garlic paste and saute until the raw smell of the paste leaves.
6. Add the tomato and let it cook for a few minutes.
7. Add the coriander powder, garam masala powder and turmeric powder. Mix well.
8. Add the chopped capsicum. Allow it to cook but don't let the capsicum become too mushy. Let it retain a bit of crunch.
9. Add the paneer cubes. Allow to cook for few mins.
10. Garnish with coriander leaves and serve.
Goes well with rotis, dosai and even rice.
Notes
1. Adjust spice level to your liking.
2. If you want a gravy, add little water otherwise do not add water. I have not added any water.
3. If your husband is like mine and won't eat paneer, replace paneer with tofu. It tastes just as good and healthy too!

- Tomato - 2 medium
- Coriander powder - 1 tsp
- Turmeric powder - 1/4 tsp

- Coriander leaves - 2 tbsp, chopped
- Salt - to taste

- Oil - 2 tbsps
