No Cook Mango Kulfi | Instant Kulfi Recipe

There is no doubt that the original/traditional way to make a dish tastes much better than these instant, quick fix methods but times are changing and no one seems to have the time for an elaborate cooking session. And this is an age of instant gratification, everything needs to be quick and fast paced. Time management has become crucial in every body's life! 

So this kulfi is for those who don't find the time to make the kulfi the traditional way. I have posted a mango kulfi recipe already which requires constant stirring for atleast half hour but this recipe requires no cooking and much simpler but of course the end product does not taste like the traditional kulfi but all the same it tastes wonderful, creamy and yum!


Mango Kulfi


NO COOK MANGO KULFI
Preparation time 10 mins | Cooking time 0 | Makes about 15 medium sized kulfi moulds

Ingredients
  • Chopped mango - 2 cups
  • Milk - 1.5 cups
  • Condensed milk - 1/2 tin 
  • Fresh cream - 1/2 cup
  • Cardamom powder - 1/2 tsp
  • Salt - 1/4 tsp
  • Almonds - 1/4 cup, chopped
  • Pistachios - 1/4 cup, chopped

Mango Kulfi

Method
1. Chop the mangoes and add it to a blender. Add the milk and blend to a smooth paste.
2. Add the condensed milk and blend again. Now add the fresh cream and blend again.

3. Add the cardamom powder and salt and blend again.
4. Roughly chop the almonds and pistachios and toast it in a microwave for 40 seconds.

5. Transfer the mango mixture to a large bowl and add the chopped nuts. Mix well.
6. Pour into kulfi moulds and freeze for 8 hours. I left it over night.

7. To de mould, show the mould in tap water and place the kulfi moulds in a bowl full of warm water for a few seconds. Twist gently and remove.


Mango Kulfi

Notes
1. Instead of fresh cream you can use whipping cream as well.
2. If you don't have kulfi moulds, pour into a bowl. I poured some into kulfi moulds and the rest into a bowl.
3. Instead of condensed milk you can use sugar. Adjust to taste.
4. Add more condensed milk if your mangoes are not too sweet.
5. You can add more nuts if you prefer.
