Vanilla Cupcakes | Easy and Tasty Vanilla Cupcake Recipe

These are some of the best vanilla cupcakes, this recipe uses both butter and oil, making it so soft and moist and delicious.



Ingredients 
  • Butter - 1/4 cup 
  • Oil - 1/4 cup 
  • Sugar - 3/4 cup 
  • Eggs - 2 
  • Vanilla - 2 tsp 
  • Flour - 1.5 cups 
  • Baking powder - 2 tsp 
  • Salt - pinch 
  • Buttermilk - 1/2 cup + 2 tbsp (Milk + 1/2 tsp of vinegar)

For the frosting
  • Whipping cream - 1/2 cup
  • Vanilla - 1/2 tsp
  • Icing sugar - 1 tbsp



Method
1. Pre heat the oven to 180 degrees for 20 mins. Line the muffin tray with paper liners.
2. Take warm milk and add vinegar, mix well and set aside. This will make the buttermilk.
3. Take butter in a bowl and add oil to it and beat it well.
4. Then add sugar and beat again.
5. Then add the eggs, add one at a time and beat it in.
6. Now add the buttermilk and vanilla and beat again.
7. In another bowl, take the maida, add baking powder, salt and mix it well.
8. Sieve the dry ingredients into the wet ingredients. 
9. Combine the dry and wet ingredients, do not overmix the batter.
10. Fill  1/2 to 2/3rd of the paper liners with the batter.
11. Tap the pan on the counter to remove any air bubbles.
12. Bake in the pre heated oven for 18-20 mins or until a skewer comes out clean.

For the frosting
1. Take the whipping cream in a bowl and add vanilla and icing sugar.
2. Beat till stiff peaks are formed.
3. You can either color the cream or leave it white and decorate the cupcakes.
4. I did a two toned frosting with pink color.
