Instant Banana Bread Recipe (Microwave )

I like 'instant' anything! Simply because I get to have it immediately and also if it is instant, it should be easy and quick to make! My all time favorite 'instant anything' is the instant microwave brownie, get's done in 3 minutes. This banana bread is like that, gets done quickly and tastes good too, enough for a sudden craving!




The recipe I followed, called it 'Banana Bread in a Mug' but please don't ever try this in a mug! It is really frustrating to try to whisk an egg and mash a banana in a mug and if you prepare it in another dish and then transfer to a mug - well, it makes no sense! 'Instant' should involve quick work and not cleaning up multiple vessels! And besides a mug is not sufficient, the batter will overflow. So make this in any suitable microwave safe bowl.

Here are some other instant microwave dishes

Ingredients
  • Flour - 3 tbsp
  • Sugar - 1 tbsp + 1 tsp
  • Brown sugar - 2 tbsp
  • Salt - 1/8 tsp
  • Baking powder - 1/8 tsp
  • Baking soda - 1/8 tsp
  • Egg - 1
  • Vanilla extract - 1/4  tsp 
  • Vegetable oil - 1 tbsp
  • Milk - 1 tbsp
  • 1 ripe banana, mashed
  • Cinnamon powder - 1/8th tsp
  • Any nuts - 1 tbsp (optional)


Method
1. In a microwave safe bowl,  whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients. Mix in vanilla, oil, milk and mashed banana.
2. Pop into the microwave for up to 2 minutes. Mine was done in 1 minute and 30 seconds. Do check after 90 seconds.
3. Allow to cool and dig in!

    1. Try flaxseed powder. Mix 1 tbsp flaxseed powder in 3tbsp of warm water and mix well. Use this instead of egg.

  7. can you please tell me the difference between baking powder and baking soda?
    And also by sugar you meant icing sugar? :)

    1. I used normal sugar and for the difference between baking soda and baking powder, I think it's best if you google it. I don't want to write a long response when it's so easily available online :)
