My favorite fruit is in season and I want to try out all kinds of desserts and drinks using mangoes! My kids are not giving me time to make a lot of desserts this summer but I did not want to miss out on baking this yummy mango cake! I love to incorporate fruits in my bakes, it's so much more flavorful instead of eating plain vanilla cake!
When strawberries were in season, I made a strawberry cake which was yummy and so I wanted to try out a mango cake as well.
I have updated this recipe with new pictures, this time I baked this cake for my daughter's best friend's birthday. The little girl was so happy! I'm so amused to see their friendship, they are so little but still such close friends! But I like this girl a lot and so far made a custard powder ice cream and an egg free mini chocolate cake for her and I'm happy she likes what I bake for her! Happy Birthday to her!
EGG FREE MANGO CAKE
Preparation time 15 mins | Baking time 30 mins | Makes one 8" cake

Method
Line and grease an 8 inch cake pan. (I used a bundt pan) Pre heat the oven to 180 degrees C
1. In a mixing bowl, add the mango puree. Add the oil and beat well. Add the sugar and beat again.
2. Add the vanilla extract and beat again. Sift in the flour, baking powder, salt and cardamom powder. Fold gently until you have a smooth batter. Do not over mix.
3. Pour the batter into the pan and tap on the counter. Bake about 25-30 minutes or until a toothpick inserted in the center comes out clean.
4. Cool the cake in the tin for 10 minutes and turn onto a cooling rack and cool completely.
Notes
1. The color of the cake depends on the color of the mango you use.
2. You can add some chocolate chips or nuts for added crunch.
3. I measured granulated sugar and then powdered it to help it dissolve easily.

My SIL ' s family was there for the birthday celebration as well and all of them loved this cake.. And we're quiet surprised knowing that it was an Eggless cake. ^_^ 10/10 for this recipe of your.. ReplyDeleteHi there , i baked this cake n it came out very gooey :( what went wrong , did i over beat it or anything else. I measured the ingredients properly though. Thanks a lot for the recipe , will try again , but pls drop in ur opinion .
