Keerai Sadam

Here is a nutritious lunch box recipe that you can pack for your family. I love to make this for my daughter's lunch box and it's one of the few days when the lunch box comes home empty! This is a healthy dish and greens being very rich in iron, it's a very good option for lunch boxes.
You can make this with any variety of keerai (greens), on this particular day I made it with arai keerai.


Keerai Sadam


KEERAI SADAM
Preparation time 15 mins | Cooking time 25 mins | Serves 3

Ingredients   (My 1 cup=240 ml)
To Temper
  • Oil - 3 tbsp
  • Cumin seeds - 1/2 tsp
Keerai Sadam

Method
1. Wash the keerai and chop them finely. Wash and soak the rice for 20 minutes.
2. In a pressure cooker, add oil. Once the oil heats up, add the cumin seeds.

3. When the cumin seeds splutter, add the chopped onions and green chillies.
4. Saute until the onions become translucent. Now add the ginger garlic paste. Saute until the raw smell leaves.

5. Add the chopped tomatoes. Cover and cook for 3 minutes in medium flame.
6. Then add all the masalas, turmeric powder, coriander powder, garam masala powder, fennel powder and cumin powder. Mix well and cook for a couple of minutes.

7. Add the curd and mix in with the masala. Add salt. 
8. Add the chopped greens and mix along with the masalas.

9. Add the drained rice and 2 cups of water. Check for salt and mix well. Add the lemon juice.

11. Add the chopped coriander leaves. Close the cooker and place the whistle. Cook for 2 whistles.
12. Once done wait for the pressure to release and then open the cooker and fluff it up.

Notes
1. You can add any variety of greens. 
2. Chopping the greens is optional. I did it since this was going into my daughter's lunch box.
3. Instead of chopping the greens you can puree the greens and add it. Like this palak pulao.
