I don't like repeating lunch box menus for atleast 2-3 weeks to keep things interesting and especially to keep my kids interested in the lunch box! So I end up making different kinds of variety rice.
One such day I made this cabbage egg rice. I usually make cabbage egg poriyal as a side dish for rice, I simply added some rice to the poriyal and made this for my kids lunch box.
You can add some peanuts for crunch.
CABBAGE EGG RICE
Preparation time 20 mins | Cooking time 30 mins | Serves 2
Ingredients (My 1 cup = 240 ml)
Method
1. Cook the rice and spread it out to cool.
2. In a kadai, heat the oil. Add the mustard seeds, urad dal, curry leaves and hing.
3. When the mustard seeds splutter, add the chopped onions and chopped green chillies.
4. Saute the onions with some salt until it turns translucent.
5. Add the turmeric powder, cumin powder, garam masala, red chilli powder and mix well. Add little water if the masala is getting burnt.
6. Add the chopped cabbage and mix well with the masala.
7. Sprinkle little water and cook the cabbage until done. The cabbage should be slightly crunchy.
8. Push the cabbage to one side and break open the eggs. Add little salt and pepper powder. Scramble the eggs.
9. Mix the eggs and the cabbage together. Check for salt.
10. Now add the cooked rice and mix well. Add the coriander leaves and switch off.
Notes
1. Add some roasted peanuts for crunch.
2. You can make this with basmati rice as well.
3. You can also make this with left over rice.
