Banana Chocolate Chips Muffins

This is one of my most favorite and special muffin recipe since this is the first muffin that I tried after I started baking. I remember, at that time, hoping secretly that no one would want these muffins so that I can have them all for myself!! It was that tasty! So soft and moist and yum! And this time when I made it again, I was left secretly hoping for the same thing!!
The flavor of banana with chocolate and cinnamon is absolutely divine. Do try it out if you have over ripe bananas at home.




Banana and Chocolate Chip Muffins
Preparation time - 10mins | Cooking time 20 mins | Makes - 10 to 12 muffins

Ingredients
  • Ripe Bananas - 3
  • Eggs - 2
  • Sugar - 1/2 cup
  • Vegetable oil - 1/2 cup
  • All purpose flour/maida - 1 and 2/3 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Salt - 1/4 tsp
  • Cinnamon powder - 1/4 tsp
  • Vanilla extract - 1/2 tsp
  • Chocolate Chips - 1 cup

Method
1. Pre heat the oven to 180 degrees C. Line a 12 cup muffin tray with paper moulds.
2. In a large bowl, add the eggs and vanilla extract and beat for a couple of minutes until light and fluffy.


3. Add the sugar and beat again. Add the oil and beat again.
4. Chop the ripe bananas and add it to the mix. Mash them nicely with the masher and then blend with the electric mixer.


5. Now sift the flour, cinnamon powder, salt, baking powder and baking soda. Or pre sift and add in small batches. Fold gently.


6. Coat the chocolate chips with a tbsp of flour and add it to the batter. Fold again.
7. Spoon the batter into muffin moulds and bake for 20 minutes or until a skewer/tooth pick comes out clean.


8. Let cool for a couple of minutes and then remove from pan. Allow to cool completely.

Notes
1. Use ripe bananas for more flavor.
2. Coating the chocolate chips will prevent it from sinking to the bottom. Use 1 tbsp to coat the choco chips from the measured flour. Don't use extra flour.
3. I used granulated white sugar but powdered it after measuring.
