What do you carry when you go visit someone? I always bake something, I feel people love home baked stuff and it's made with a loads of love so it's always been a hit! I made these delicious muffins for a friends meet, my dear friend loves banana bakes and since I already took my best ever banana bread the last time I met her, this time I choose to bake these delicious chocolate and banana muffins.
Banana and chocolate always go well with each other, I love the banana and chocolate smoothie that I make often and these muffins with the same combo are so moist, so yum the taste is just extraordinary! Perfect for an evening snack.
CHOCOLATE BANANA MUFFINS
Preparation time 15 mins | Baking time 20-25mins | Makes 15 muffins

Method
Pre heat the oven to 180 degrees C. Line the muffin tray and set aside.
1. Mash the bananas in a bowl. Add the sugar and beat well for 2 minutes.
2. Add the egg (or yogurt) and vanilla extract and beat again for another 2 minutes.
3. Beat in the oil.
4. Sift in the flour, baking soda, baking powder, cocoa powder, salt and coffee granules. Or pre sift and add.
5. Fold gently. Do not over mix.
6. Now add the chocolate chips and mix well.
7. Spoon the batter into muffin moulds. Make sure the batter fills only 2/3 of each mould.
8. Sprinkle the walnuts over each mould.
9. Bake for 20-25 minutes or until a skewer comes out clean.
10. Cool the muffins in the pan for a couple of minutes and then remove and let cool completely.
Notes
1. You can add a pinch of cinnamon powder too.
2. Coat the chocolate chips with some flour to prevent it from sinking to the bottom.
3. Adding coffee is purely optional. I like adding some coffee to my chocolate bakes.

- Oil - 1/3 cup
- Sugar - 1 cup
- All purpose flour (maida) - 1.5 cups
- Cocoa - 1/4 cup
- Baking soda - 1 tsp
- Baking powder - 1/4 tsp
- Mini chocolate chips - 1 cup
- Instant coffee powder - a pinch (optional)
- Salt - 1/ tsp
- Vanilla extract - 1/2 tsp
- Chopped toasted walnuts - 1/3 cup (optional)
