You must be wondering why these brownies are called slutty brownies! Well, I'm guessing because they are so sinfully delicious and rich! When I found this recipe I simply had to try it! I have made many brownies and this has become one of my favourites!
This brownie has 3 layers, a cookie dough layer, a sandwich cookie layer (like oreo) and an outrageous brownie layer on top. If you want to indulge, then this is the recipe for you!

Preparation time 20 mins | Baking time 35-40 mins | Makes about 16 slices

Method
Pre heat the oven to 180 degrees C. Grease and line a 9 inch square baking pan with parchment paper. Leave an over hang so that it will be easy to remove the baked brownie. Grease well.
For the brownie layer
1. Melt the butter in microwave or a saucepan over medium heat. Add the sugar, cocoa powder and coffee granules. Once everything is mixed together remove from heat. Let it cool.
2. Once it's slightly cooled, add the eggs and vanilla and beat well.
3. Sift in the all purpose flour and salt. Fold gently, do not over mix.
4. Add the chocolate chips and fold again.
5. Set aside.
For the cookie dough layer
1. Cream together the butter and white sugar, brown sugar until it's light and fluffy.
2. Add the egg and vanilla and beat again.
3. Sift in the flour, salt, baking powder and baking soda.
4. Add the chocolate chips and fold gently until it's all mixed well.
5. Set aside.
Assembling
1. Spread the cookie dough at the bottom of the pan.
2. Layer as many cookies that will fit on top of the cookie dough. Keep only a single layer.
3. Now pour the brownie batter on top of the sandwich cookies and spread till it covers the cookies.
4. Bake in the pre heated oven for 35-40 mins. Check with a skewer, it should come out with only a few crumbs sticking to it.
5. If it's not done by 35 mins, leave for another 5 minutes. Do not over bake the brownies.
6. Remove from oven and cool completely.
Notes
1. I used granulated white sugar, measured it and then pulsed it in a blender to help the sugar dissolve easily.
2. If you want neat cuts, then refrigerate the brownies after it's completely cooled down. Then cut the brownies, you will get neat cuts.
3. The cookie dough might seem like it's less for a 9 inch pan, nevertheless, spread it as much as possible throughout the pan. It is more than enough.

ReplyDeleteI'm not sure Aara, I've never tried a chocolate chip cookie replacing butter with oil so not too sure if that will work out fine. Let me know if you try that change :)

ReplyDeleteI tried making it, the brownie layer was baked, but when I removed it from the tin, the cookie layer was still very moist and soft! Where did I possibly go wrong?
ReplyDeleteThat's not a problem, just reduce the temperature and bake for little longer. It will come out beautifully.
