Cabbage rice is a tasty and healthy lunch box recipe. It is very simple to make and a great way to include cabbage in your kids lunch boxes. You can also make this on a lazy day and pair it with chips or raita.
CABBAGE RICE
Preparation time 15 mins | Cooking time 25 mins | Serves 2-3
Ingredients
Method
1. Wash and cook the rice separately. Allow the rice to cool.
2. In a wok, heat the oil and add the mustard seeds, cumin seeds, urad dal, curry leaves and hing.
3. When the mustard seeds and cumin seeds splutter, add the chopped onions and green chilli.
4. Add salt and saute until the onions turn translucent. Add the chopped tomato and cook for 3 minutes until the tomatoes are cooked.
5. Add all the masala mentioned, add 2 tbsp of water and mix well. Cook for another 3 minutes.
6. Add the capsicum and saute for a few minutes. Add the cabbage and mix well with the masala.
7. Sprinkle some water, cover and cook for about 5 minutes or until the cabbage is cooked well.
8. Add the lemon juice and mix well.
9. Add the cooked rice and toss well. Add some chopped coriander leaves and switch off.
Notes
1. You can add more spice, I used only 1 green chilli as my kids don't like spicy food. You can add some red chilli powder too.
2. You can add some green peas too instead of capsicum.
3. You can use leftover rice too.

- Capsicum - 1
- Onion - 1
- Tomato - 1
