Fruit Cake Ice Cream
This past Christmas did not go well for my family. My mother in law passed away and we did not celebrate Christmas and the fruit cake that I had made a week earlier was left in the fridge. I gave away a lot of cake and with the left over I made this ice cream.
This ice cream is so delicious and rich with all the nuts and dried fruits. We go to an ice cream parlour near our house where they mix our favourite ice cream with chocolate cake and we all love having that ice cream, this fruit cake ice cream tasted similar to that except this was more tasty and lip smacking with all the fruits and nuts added to it!

Chocolate Fruit Cake | Chocolate Christmas Cake Recipe
This year I made a boiled fruit cake for our prayer group and then I had to bake some other cake for my family and neighbours. But unfortunately I did not have any soaked fruits! Instead of sulking about it, I decided to go ahead and bake a cake. So I chopped my fruits and nuts and soaked them for about 18 hours and then I baked this cake. And I soaked with grape juice only!
This is such a fabulous cake! You don't really get the chocolate flavor but the chocolate definitely enhances the overall flavor of the cake. I'm sure if I had soaked my fruits longer or if I had used alcohol, this cake would have tasted even better!

The cake is moist, soft and full of fruits and nuts. I did not soak the fruits ahead and I did not bast the cake with alcohol. I didn't even wait for 24 hours to cut this cake (which is what I normally do with fruit cakes), I cut this cut within 20 minutes of taking it out of the oven and still it tasted awesome! Ideally, the fruits for this cake should be soaked days earlier and the cake baked few days ahead of Christmas and then bast the cake with alcohol until you cut the cake. You will love the burst of flavor!

Boiled Fruit Cake | Easy Christmas Cake
I never soaked fruits for this year's Christmas cake, mostly because of all the rain and floods in my city, I'm simply not in the mood to celebrate. Or maybe I was just lazy and procrastinated! I think it's a bit of both. Either way, I did not have soaked fruits for my cake.
So I decided to make a simple, easy, lazy Christmas cake. This cake is a really easy, simple, no fuss cake. But still the cake tastes awesome! Boiling the fruits increases the flavor tremendously making this a wonderful bake for Christmas.
I'm almost thinking of baking this cake every year! It's that tasty and soft and moist! Since it's so simple, I'm seriously tempted to make this my go to Christmas Cake!
The only time taken is to chop the fruits and waiting for the boiled fruits to cool down! I used what ever fruits I had at hand. Raisins, sultanas, dried apricot, dried figs, dates, cherries. I did not add any nuts, if you want to add, then don't boil the nuts. You can add it after the fruits have cooled down.

Christmas Cake Truffles | Christmas Cake Balls
Here is another way to use up left over Christmas Cakes. In our home, fruit cakes never last long so this time as soon as I baked the cake, I hid half of the cake to make these truffles and the fruit cake fudge bar, for my blog!! These truffles are easy to make and tastes delicious too! It tastes so good that you don't have to make this with just left over fruit cakes, you can bake cakes just to make these truffles!

Eggless Christmas Fruit Cake | Eggless Plum Cake
I have posted a Christmas Fruit Cake with eggs and that is the recipe we love the most but when we have to distribute cake for others, I need an egg free version since some of our neighbors don't eat eggs. And for that this recipe works beautifully! I have also posted a Dundee Fruit Cake which is so rich in fruits and nuts, that it's totally delicious!

Christmas is in the air! This season brings a lot of joy and fond memories! This is the time of the year when we as children used to visit my grandmother's house and all our cousins, uncles and aunties together had an awesome time of fun! Christmas tree in every house, singing carols, a time to enjoy and be joyful!

We would all wake up early in the morning, Christmas Day and go to church and come back home for a time of feasting. Without a doubt, there will be a lot of chicken recipes! Breakfast of idli and chicken kuzhambu, chicken biryani for lunch and of course my athai (my aunt) made the most fabulous, fabulous Christmas cake!

The only thing that annoys me about Christmas is that, people now a days associate Christmas with only fun and frolic and forget the real meaning and purpose of Christmas. Christmas is celebrated since Christ was born in this earth, salvation came through Jesus, without whom we will all die in our sins. He is the savior who went on to die on the cross to pay for all our sin and sickness. True joy of Christmas is knowing that we are saved through knowing and receiving Him.

How to make Caramel for Fruit Cakes
Making the caramel for fruit cakes can be pretty daunting if your a newbie to baking. It is hyped up a lot and people generally look for fruit cakes that does not require the making of caramel sauce. But in reality it is not such a big thing. It is quite simple, it requires a lot of patience and towards the end some quick action to make a really good caramel sauce.

The first description is making a caramel without adding water to it, it's also called the dry caramel. The second description is the wet caramel, where water is added to the sugar. Which ever method your recipe calls for, follow that using this as a guideline.

Instant Microwave Fruit Cake (no eggs & no butter)
INSTANT FRUIT CAKE! If you have followed my blog, you know how much I love the instant recipes. So when I came across this one, it's only natural that I tried it immediately!
I love Christmas, I love everything about Christmas but most of all I love baking the Christmas fruit cake! The other day I was travelling in my brother's car and I was listening to some carols, it's ever green Christmas in their car! They play Christmas carols all through the year! Those songs put me in the mood for something 'Christmassy' and I tried this recipe and what an awesome recipe it is!
