Instant Microwave Mango Cake (eggless and butterless)

I had some left over mango pulp after making my mango mousse cake so as I was wondering if I should just eat it or if I can make something with it, I came across this recipe and tried it out. This cake is absolutely gorgeous! So soft and moist and delicious!
Have you seen Peppa Pig (the cartoon) where Mummy Pig eats Granny Pig's apple and blackberry crumble and relishes it so much?! I felt like that! (My daughter's obsession with peppa pig is rubbing off on me!)

Anyway, I have baked some mango cakes before, like the eggless mango cake and mango marble cake but this microwave cake was the softest of them all! I could not believe how moist and soft this was!

As I was eating, I felt a little guilty that I was eating it without my husband (who was at work) so I left some in the refrigerator. After 9 hours, when my husband came home, I re heated the cake in the microwave for 90 seconds and it became just as soft and moist as before! This is an awesome recipe! 
You can make this in a single microwave safe bowl or mug.

Here are someother instant microwave dishes

Ingredients  - Serves 2
  • All purpose flour/maida - 4 tbsp
  • Sugar - 4 tbsp
  • Baking powder - 1/2 tsp
  • Baking soda - 1/4 tsp
  • Mango puree - 3 tbsp
  • Oil - 1 tbsp
  • Milk - 4 tbsp
  • Vanilla extract - 1/8 tsp (few drops)
  • Chocolate chips / nuts - 2 to 3 tbsp

1. In a microwave safe bowl, add all the wet ingredients - the milk, oil, vanilla and mango pulp.
2. Add the dry ingredients - the flour, sugar, baking powder, baking soda, salt.
3. Mix everything well until it becomes a homogeneous mix. Add chocolate chips or nuts.
4. Microwave on high for 2 minutes. I stopped the microwave at 60 seconds and checked if it's done. Then checked again at 90 seconds, it was a little wet so left for another 30 seconds.
5. Enjoy delicious and insanely soft mango cake!

1. Do not over bake. If you over bake, the cake will be rubbery. 
2. Every microwave is different. Mine is 900 watts. I kept for 2 mins on high. Adjust the timings accordingly.
3. Check after 90 seconds, if it's done.
4. I used 4 tbsp of granulated sugar but pulsed it in the blender so it will dissolve easily.
5. If it's not done in 2 minutes, leave it for another 10 seconds.
6. You can use any other fruit puree other than mango too.
7. Do not over mix. Fold gently. Mixing too much can make the cake hard.
8. Do not add too much mango pulp. Add only 3 level tbsp of mango pulp. If you add too much, the cake will get soggy.

    1. Hi, I have never baked this one in an OTG, so I don't know about temp and time. However, there are other mango cakes in my blog, which are baked. You can check that out.

    1. Yes you can but oil makes it more moist.

    1. Yes you can. This is a microwave recipe only, does not need a convection mode for this recipe.

    1. You mean in a microwave? You can try but I would suggest try the small recipe first before doubling it.

  15. I dont have baking soda. I have only the baking powder. Any ideas? ?

  16. Oh My God! My kitchen is a complete mess, I'd just cleaned it. As end result I have two blobs of leathery stuff with uncooked liquid in the middle. I tried mixing and re-microwaving to no avail. It tastes like uncooked flour. I don't get it... I respected the proportions and ingredients except for the chocolate - I used chopped nuts. I made it twice thinking the container was no good but nope, same mess. I just wasted the best mango on Earth :(( That should teach me a lesson never to attempt cooking fruits.

    1. Maybe it was because I used fresh mango and not store bought mango puree?

    2. Sorry it didn't work for you! This is a very simple recipe that I've made many times and I've had many good feedback for this cake so I know it's not the recipe. I do a lot of bakes with fruits and vegetables and it comes out good. Try some other fruit recipe, I'm sure you'll love it!
      You know, if the bowl is small, it tends to overflow or maybe the baking soda and powder were a bit off.
