Beetroot is such a healthy vegetable and we love it at home! Even if you don't like this veggie, you have to find a way to include it in your diet since it's such a wonderful vegetable with so many health benefits! I make a lot of beetroot for my kids too and since I'm giving it to my kids who are 4 and 2 years old, I grate the vegetable so that it's easy for them to eat. You can chop the beetroot into small pieces and make this poriyal. I also make beetroot pulao for my daughter's lunch box. This poriyal goes very well as a side dish to rice.
BEETROOT PORIYAL
Preparation time 10 mins | Cooking time 15 mins | Serves 2

Method
1. Grate or chop the beetroot and set aside.
2. In a skillet, heat oil. Add the mustard seeds, urad dal, cumin seeds, curry leaves and green chilli.
3. When the mustard seeds splutter, add the grated beetroot and stir for 2 minutes.
4. Add 1/4 cup water, cover and cook the beetroot for about 5 minutes, till it's half done. Stir in between to avoid the beetroot getting burnt.
5. Open the lid and add the turmeric powder, coriander powder, pepper powder and salt. Mix well and cook for 5 - 8 more minutes till the beetroot is well cooked and soft.
6. Once done, switch off.
Notes
1. We don't add onions to this recipe but you can add chopped onions too.
2. You can add some grated coconut too at the end.
3. You can also chop the beetroot and pressure cook with the masalas and then do the tempering. That way, it gets cooked fast.

- Turmeric powder - 1/2 tsp
- Pepper powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Water - 1/4 cup
- Salt - to taste
- Oil - 1 tbsp
