Chocolate Muffins

Chocolate muffins is an easy and simple recipe that you can bake as an even snack or for your guests. This is so delicious and chocolaty that you will fall in love with it!! I made this for our prayer group and it disappeared in no time!

Ingredients              
  • All purpose flour (maida) - 1 and 3/4 th cup (230 gms)
  • Unsalted butter - 113 gms
  • Large eggs - 2
  • Buttermilk - 1 cup (240 ml)
  • Unsweetened cocoa - 2/3 cup (60 gms)
  • Brown sugar - 1 and 1/4 cups (265 gms)
  • Baking powder - 1 tsp
  • Baking soda - 1 tsp
  • Chocolate chips - 1 cup (170 gms)
  • Salt - 3/4 tsp
  • Instant coffee granules - 1 tsp (I used nescafe)
  • Vanilla extract - 2 tsp

Method

1. Make the butter milk and melt the butter and set aside. Pre heat the oven to 180 degrees C and line a muffin tray with paper liners.

2. Beat the eggs along with vanilla until it's light and fluffy. Add the brown sugar and beat again.
3. Melt the butter and add it in, beat again. Add the buttermilk and beat again.

4. Sift in the flour, cocoa powder, baking powder, baking soda, salt and coffee granules.

5. Add the chocolate chips and mix well without any lumps.
6. Fill the muffin liners with the batter. Fill only to half the liner.

7. Bake in the pre heated oven for 18-20 minutes.
8. Once done, remove from the muffins from the oven and let cool for 2 minutes, then remove the muffins from the pan and cool completely.

Notes
1. Do not over mix/beat the batter. Otherwise the muffins will become tough.
