I baked these muffins for my family as I was looking for healthy recipes to participate in a Healthy Bake contest. I tried out the Choco Banana Whole Wheat Muffins, Millet Cookies and this muffin recipe. All three turned out to be fabulous!
My family loved this muffin, it's healthy and delicious. You won't miss the refined flour! The texture of a whole wheat muffin is different from the texture of a muffin made with all purpose flour but still it's equally tasty and yum and you don't feel guilty making it for your family!
CARROT BANANA WHEAT MUFFINS
Preparation time 15 mins | Baking time 20 mins | Makes 9 muffins
Ingredients
Method
Pre heat the oven to 180 degrees C. Line a 9 cup muffin tray with paper liners.
1. In a large bowl, mash the banana. Add the oil and yogurt and beat well.
2. Add the jaggery and beat again.
3. Sift in the wheat flour, baking soda, baking powder and salt. Fold gently.
4. Add the milk and fold again. Now add the oats and mix with a spatula.
5. Add the grated carrots, raisins and walnuts and mix again.
6. Bake in pre heated oven for 18-20 minutes or until a skewer comes out clean. Cool in the pan for 2 minutes and then remve to a cooling rack and cool completely.
Notes
1. I did not add walnuts since my kids are not fond of them, instead I added some extra raisins.
2. If your batter is thick, add little more milk.
3. For a whole wheat recipe, the batter must be little loose otherwise you will get a very dense muffin.
