I make millet based curd rice often and if I am packing it for lunch boxes then I make this varagu arisi curd rice (with whatever millet I have at hand). But if it's for a quick meal then this is the easiest ans simplest curd rice ever. Tastes so delicious and it's such a comfort food! This tastes no different from the normal curd rice (made with rice) and I just love to have this with some pickle!
I made this with kuthiraivali (barnyard millet), you can make it with varagu, thinnai or samai also.
QUICK MILLET CURD RICE
Preparation time 5 mins | Cooking time 10 mins | Serves 2-3
Ingredients
Method
1. Wash the kuthiraivali well. Transfer it to a pressure cooker and add 1.5 cups of water. Add some salt, close and pressure cook for 3 whistles.
2. Open and mash the millet with a ladle/spoon.
3. Add the milk and mix well.
4. Add the salt and curd and mix well.
Serve with pickle.
Notes
1. You can add more curd if you want. Since we are eating this immediately, you can m=add more curd as per your taste.
2. If you have time, you can soak the millet for 30 minutes and then pressure cook.
3. You can do a tempering/tadka too.
