For my daughter's 7th birthday, she wanted a castle cake, she told me well in advance that she wanted a castle cake so I had plenty of time to think how to build this cake. I don't work with fondant so I had to make a castle without any fondant accents. I went through many images on google and worked out an image that worked well for me. I drew out a simple castle cake design, one that will be easy to make and simple to build.
In the end, I was pretty happy with the way the cake turned out and most of all my daughter was extremely happy with her cake!
I used 3 cakes in total to build this castle. I made 2 square cakes with eggs and 1 round eggless cake that is smaller than the square cake. You can choose your favorite chocolate cake recipes. For the square cake, I used this double chocolate cake recipe but I used butter instead of oil in this recipe. And for the round cake, I made this egg free chocolate cake.

CASTLE CAKE
Preparation time 5 hours (including baking time)
Things needed
- Square chocolate cake - 2
- Round chocolate cake - 1
- Small round biscuits - 32 biscuits (I used jim jam biscuits)
- Wafers - 7
- Marshmallows - 15
- Bread sticks - 2
- Ice cream cone - 5
- Tooth picks - 5
- Flags - 5
- Ganache
- Simple syrup/chocolate syrup
- Whipping cream - 2 cups
- Vanilla extract - 1 tsp
- Pink color - 8 drops
- Icing sugar - 3 tbsp
Method
Baking the cakes
1. Bake the cakes the previous day and cling wrap them and leave it in the refrigerator.
2. As mentioned earlier, I made 2 of this double chocolate cake recipe. I used butter instead of oil in this recipe. And for the smaller round cake, I made this egg and dairy free chocolate cake.
Make the ganache
2. Cover and leave it aside to set.
Building the castle
1. Take the cakes out of the refrigerator and level the top. Then slice the cakes and keep it aside.
2. Take the cake board and place a small amount of ganache on the cake board.
3. Place the first layer of chocolate cake and spread the simple syrup.
4. Place a layer of ganache and spread well.
5. Now place the next layer of cake and soak with simple syrup and fill with ganache.
6. Repeat with the rest of the square cake layers.
7. On a plate, trim, slice, soak and fill the round cake too. Set aside.
8. Now cut out a small corner portion of the square cakes. Cut on all 4 corners to make the castle tower with the biscuits.
9. Keep the biscuits in the cut out portion of the cake to make the tower. Make sure the biscuits come out a little so that the tower is nicely visible.
10. If you have cut off large portions, then build the gaping portion with cake crumbs.
11. Seal the top and sides of the cake with ganache.
12. Take the whipped cream and frost the cake completely. I used a piping bag and piped all around the cake and smoothed it out with my spatula.
13. Do a crumb coat for the round cake separately and then gently place the round cake in the center of the square cake.
14. Now frost the round cake thoroughly.
15. Take 2 wafers and cut it in the shape of a door and place it at the front of the castle. Also make small squares out of the wafers and place it as windows all around the castle.
16. Break 2 bread sticks and use 2 more wafers to make a drawbridge for the castle.
17. Now cut the marshmallows into halves and place it all around the top of the castle.
18. Place and ice cream cones on the towers of the castle and one cone in the center of the castle.
19. Make small flags and stick it on the tooth picks and place the flags on the ice cream cones.
And that's it! A simple and easy castle cake is all ready!
Notes
1. Make sure you level the tops of your cakes otherwise you cakes can break as your keep building the layers.
2. If you have cut off large portions of the corner of the cake, you will have to build it again with cake crumbs. Try to cut only a small portion.
3. Try using white marshmallows, I think a contrast will look nice. I did not get white so used pink.
4. Add more drops of color if you want a deeper pink.
5. Few of my guests were vegetarians so I chose an eggless recipe for the smaller cake for them. You can choose which ever recipe you like - with eggs or without eggs.

- Dark chocolate - 550 gms
- Cream - 250 gms
2. After 5 minutes, start mixing the chocolate and cream until it is smooth and homogeneous.
Whip the cream
1. Whip the cream with vanilla until soft peaks. Add the icing sugar and whip till stiff peaks are formed. You will have to whip for atleast 8-10 minutes.
2. Add the pink color and whip till incorporated.
Building the castle
1. Take the cakes out of the refrigerator and level the top. Then slice the cakes and keep it aside.
2. Take the cake board and place a small amount of ganache on the cake board.
3. Place the first layer of chocolate cake and spread the simple syrup.
4. Place a layer of ganache and spread well.
